Need to bring a covered dish to a potluck? Or maybe you’re hosting a summer pool party? Whatever the occasion may be, this easy seven layer dip recipe is going to be your new go-to recipe! It’s easy to make ahead, and it’s something that everyone already knows and loves. While I love trying new recipes… Sometimes it’s best to stick with a familiar classic like this! Seasoned refried beans serve as a sturdy base, then they’re topped with guacamole, sour cream (dressed up with taco seasoning), cheese, tomatoes, olives, and green onions. Addictive doesn’t even begin to describe how good this timeless dip is!

What should I serve with seven layer dip?

This dip is most commonly served with crunchy tortilla chips. However, you could also offer crackers, mini pitas, or even some sturdy veggies like celery and bell peppers. 

How to Make Seven Layer Dip

  1. Dress up the refried beans. Mix the refried beans with the salsa and 1 tbsp of taco seasoning.
  2. Add the first layer. Spread the bean mixture evenly into the bottom of a casserole dish. 
  3. Add the guac. Spread the guacamole over the bean layer, being careful not to mix the layers. 
  4. Season the sour cream. Stir together the sour cream, remaining tbsp of taco seasoning, and garlic powder. 
  5. Keep layering! Spread the sour cream mixture over the guacamole layer, then sprinkle on the cheese, tomatoes, black olives, and finally green onions.  
  6. Let it chill. Cover and refrigerate for at least 30 minutes before serving for the best flavor. 
  7. Serve. Serve chilled with tortilla chips and lime wedges if desired.

Storing and Make Ahead

Seven Layer Dip can be stored covered in the fridge for up to 3 days. If the tomatoes on top release some liquid as they sit, no worries! Just gently dab with a paper towel to clean it up. 

This is one of the BEST make ahead appetizer recipes. Assemble it up to 24 hours in advance, cover it tightly, and refrigerate until you’re ready to serve. For the best fresh texture, you can add the diced tomatoes, olives, and green onions right before serving.

Ingredient Notes

  • Refried Beans – Mixing the refried beans with both salsa and taco seasoning gives the base more flavor and makes it easier to spread. 
  • Salsa – Grab your favorite red salsa from the grocery store, or use my easy blender salsa recipe! 
  • Taco Seasoning – I usually use low-sodium taco seasoning, but of course just use whatever you’ve got. 
  • Sour Cream – Regular or low-fat, both work just fine here. 
  • Garlic Powder – A little of this goes a long way in this recipe, so avoid adding too much. 
  • Guacamole – Grab a container from the produce section, or go the extra mile with my favorite guacamole recipe! 
  • Mexican Blend Cheese – You can spice things up by sprinkling some Pepper Jack cheese in the mix as well. 
  • Tomatoes – If your tomatoes are extra juicy, you can pat them dry with a paper towel before adding them.
  • Black Olives – I don’t recommend swapping these with any other kind of olive. 
  • Green Onions – Save these for last as the final touch! Don’t bury them under the other heavy toppings.

Ingredients 

  • 2 16oz Cans Refried beans
  • 1 Cup Salsa
  • 2 Tbsp Taco seasoning divided
  • 2 Cups Sour cream
  • 1/2 tsp Garlic powder
  • 2 Cups Guacamole
  • 2 Cups Shredded Mexican blend cheese
  • 3 Medium tomatoes diced
  • 1 6 oz Can Sliced black olives drained
  • 6 Green onions sliced

Instructions 

  • In a medium bowl, mix the refried beans with the salsa and 1 tablespoon of taco seasoning until combined.
  • Spread the bean mixture evenly into the bottom of a 9×13-inch dish.
  • Spread the guacamole over the bean layer, being careful not to mix the layers.
  • In another bowl, stir together the sour cream, remaining tablespoon of taco seasoning, and garlic powder until smooth.
  • Spread the sour cream mixture over the guacamole layer, then sprinkle on the cheese, tomatoes, black olives, and finally green onions.
  • Cover and refrigerate for at least 30 minutes before serving for the best flavor.
  • Serve chilled with tortilla chips and lime wedges if desired.
