Beef and Noodles:
This post first appeared over at Eazy Peazy Mealz French Onion Beef and Noodles, where I’m a contributor. We first published this post in January of 2018 and it INSTANTLY became a reader fave! Now we are giving it a photo makeover as well as updating directions based on reader feedback!
I like to think of this recipe as kind of an upgraded beef stroganoff. Just adding a few extra ingredients like French onion soup, parmesan cheese, and crispy fried onions really take the flavor to another super hearty level. I’ll also say that this meal at first happened by complete accident! I had some beef stew meat to use up and basically just paired it with whatever else I happened to have on hand at the time as well. Now, this impromptu “man I really need to get to the grocery store” dinner, has become a part of our regular meal rotation. We all went back for seconds, it’s that good!
How To Make French Onion Beef and Noodles:
- Start by searing your stew meat in olive oil until browned on all sides. You can see in the photo that we still have some red/pink showing through, and that is just fine!
- Stew meat is super budget friendly, but it can also be tough. This is why we are going to simmer the beef in the broth and french onion soup for about 10 minutes before adding the noodles.
- Add the egg noodles to the pan and simmer, stirring the noodles around occasionally. It will seem like a lot of noodles at first, and that is ok. You’ll notice that they start to cook into the sauce. Continue to stir and push the noodles down in the broth so they cook evenly.
- Remove the pan from the heat and add in your sour cream and cheese stirring well until incorporated. Then, top with the french fried onions as desired.

Absolutely delicious!! I left Out the Parmesan (personal choice lol) everyone loved it!! Took less than 40 minutes to prepare and tasted like I spent all day. Thank you!!
Made this tonight, we all loved it! I loved that it was quick easy and all done in one pot! Definitely a keeper!!
I made this recipe for my husband and two toddlers. It was a huge hit! I made it as is, didn’t change anything about the recipe. We all loved it.
The only change I will make in the future is to either simmer the meat for longer to get a more tender texture, or use a different cut of meat. But this will definitely be on our dinner rotation for the future! Thank you!
I used stew meat & cut into smaller pieces. Tossed them in flour & seared the meat with sliced mushrooms. The brown bits & flour made a hearty broth with 1/4 cup of sherry & the broth & soup for 2 hours in Dutch oven. Added noodles and a bit more broth. Added remaining ingredients. The sherry made it really smooth. Amazing.
Mary, I’m planning to do the same as you but e as wondering…Did you keep the Dutch oven on the stove for 2 hours on simmer or did you throw it in the oven?
I made this last night but in the crockpot , adding the noodles at the last minute. I also added mushrooms and onions because my family is obsessed with mushrooms…this was a big big hit, delicious, loved it, its going on our menu rotation. Thank you so so much for sharing!!
Did you change anything…. quantities etc for making in the crockpot? Also how long do the noodles take once you throw them in
That’s what I will do we are the same mushroom & onion
This is a regular meal in my house. It’s very hard to find a meal that all 3 generations will eat.. And this gets devoured. I Double the recipe. And I toss the meat and broth and soup into my crock pot for around 4 hours. Then I move it all to the stove and finish from there.
Made this tonite. Followed the recipe exactly only doubling it. Also made a chicken version (I don’t eat any red meat) using 2 pieces of cut up skinless boneless chicken, chicken broth n replaced the French onion soup with 10 oz of chicken broth mixed with 1 packet of lepton onion soup mix. My chicken version was delicious n my family all loved the beef one. Will definitely have to make this again
Do you ever read the reviews and wonder if you’re all using the same recipe? My only changes were to use about 3.5 cups of broth (that’s what the two cans I bought totaled) and I threw in a can of mushrooms. I salted my meat lightly during searing since I knew the broth, soup and cheese would add more. I found this easy and delicious. The meat was no tougher than any piece of well done steak I’ve had (I think it was chuck), and there was plenty of liquid to cook my noodles. Next time I might add another can of soup and leave out the sour cream to pump up the onion flavor. Or, you know, add onions.
I made this today and it taste good but next time I’ll cook the egg noodles separately. Took longer for them to cook. Only disappointment with this.
Remember that the flavors permeate the noodles, so don’t forget to mix them prior to finishing cook time.
I live this recipe, it is always a go to for me! Instead of stew meat I use ground beef and it cooks up super easy and tastes great! The only problem is when cooking the noodles the broth boils away so it make it hard to cook the noodles. But over all a great recipe
I suggest lowering your heat. You only need a simmer, not a full boil to cook the noodles. You can also try covering your pot to trap more liquid.
