You’ll never need another baked potato recipe, I promise! If you want a foolproof recipe that yields the perfect results every single time with just 5 minutes of prep work, this is it. Potatoes get poked with a fork, coated with olive oil and salt, then air fried to perfection in under an hour. The way that the air fryer crisps up the salty potato skins is unbeatable! They’re perfect with butter and sour cream, but also sturdy enough for chili, BBQ chicken, cheesy broccoli, or taco toppings. This is one of those recipes you’ll use again and again!

Why do I need to poke holes in the potatoes first?
This helps the steam escape while the potatoes cook. If you forget to poke holes before air frying, the potatoes may very well explode and make a big mess for you! You don’t need to massacre the potatoes with your fork – just a few gentle pokes all over will do the trick.
How to Make Air Fryer Baked Potatoes
- Preheat. Preheat the air fryer to 400°F.
- Prep the potatoes. Scrub and dry the potatoes. Pierce each one a few times with a fork. Rub the potatoes with oil and sprinkle with salt.
- Air fry the potatoes. Place the potatoes in the air fryer basket in a single layer. Try to make sure they’re not touching. Cook for 40-50 minutes, flipping halfway through, until fully cooked.
- Enjoy! Slice open, fluff with a fork, and serve.

Storing, Reheating, and Freezing
Store leftover baked potatoes in an airtight container in the fridge for up to 5 days. Let them cool completely before storing so extra steam doesn’t make the skins soggy!
I recommend using the air fryer to reheat your leftovers, since it’ll bring back that crispy skin. You can use the microwave, but the texture will be much different.
You can freeze baked potatoes, but the texture may be a little more grainy once thawed. Llet them cool completely to room temp before wrapping each potato tightly in foil. Freeze for up to 3 months. Defrost overnight in the fridge before reheating in the air fryer!
Ingredient Notes
- Russet Potatoes – Russets have thick skins and starchy centers, which makes them the best choice for crispy and fluffy air fryer baked potatoes. Be sure to rinse and dry them very well before cooking! If they’re still wet from rinsing, they won’t crisp up.
- Olive Oil – Avocado oil also works. A light coating of oil is what helps the salt stick to the skin, and helps create the best texture.
- Salt – I recommend using flaky sea salt if possible! Also, make sure to evenly sprinkle the salt all over the potato, not just the tops.
