Queso Fundido
If you haven’t had Queso Fundido, you’re in for a treat. We love making chorizo with ours, but it’s completely optional if you want just the cheese and no meat at all. For our version, we cook the chorizo along with some onions and green chilis. Then layer it up with two kinds of cheese. That’s also one of the best parts, this dip uses SHREDDED CHEESE, right in the skillet! There’s no messing around with trying to make a roux, or any of that jazz. We use cheeses that are going to be easy to find at any supermarket, which makes our version more of a “tex-mex” style. We’re always making it for game day and usually have no problem cleaning the skillet out between a few of us. So, you’ll want to definitely double the recipe for a crowd, it’s usually the first dish to go! Everyone just can’t wait to dig into this dip!

What is Queso Fundido?

Then layer it up with two kinds of cheese. That’s also one of the best parts, this dip uses SHREDDED CHEESE, right in the skillet! How To Make Queso Fundido
- Preheat. Set the oven to 425°F. Take a large skillet over medium heat and melt the butter.
- Cook the veggies. Once the butter has melted, add in the onion and green chili. Cook, stirring occasionally, for about 3 minutes or until the onion begins to soften.
- Brown the chorizo. Add the chorizo to the skillet. Cook and crumble until cooked through, about 6-8 minutes.
- Drain. Pour the chorizo mixture onto a paper towel lined plate to drain the grease.
- Layer. Remove the skillet from heat. Add half of the Monterrey Jack and half of the pepper Jack cheese. Pour in half of the chorizo mixture, then top with the remaining cheese.
- Bake. Place the skillet in the oven and bake for 15-20 minutes, until hot and bubbly.
- Garnish and serve. Garnish with the remaining chorizo mixture. Serve while hot with your favorite chips or warmed tortillas. Enjoy!
Storing Queso Fundido
This queso is best enjoyed when freshly made but you can store leftovers in an airtight container in the fridge for up to 4 days. Don’t microwave it to reheat it! Reheat this dish in the oven the way it was originally made so that it doesn’t get too gloopy and oily.
Ingredients Notes for Queso Fundido
- Butter – Salted or unsalted works for this recipe.
- Onion – Half a large white onion. You could substitute it with a yellow onion as well.
- Green Chilis – 2 cans, drained. You can use mild or spicy, whatever you prefer.
- Chorizo – Pork or beef chorizo can be used. Of course if you want to keep this vegetarian friendly you don’t have to add the chorizo at all.
- Shredded cheese – The best combo of cheeses I have found are Monterrey Jack and Pepper Jack! If you don’t love the spice of pepper jack, you can sub with a mild cheese like mozzarella.

- 2 Tablespoons Butter
- 1/2 Large White Onion
- 2 Cans Green Chilis drained
- 8 Ounces Pork or Beef Chorizo
- 8 Ounce Block Monterrey Jack Shredded
- 8 Ounce Block Pepper Jack Cheese Shredded
