There’s nothing quite like home fries sizzling in a skillet first thing in the morning. Whether you’re just craving some golden, crispy, buttery potatoes, or you’re trying to cure a hangover on a Sunday morning, this is the recipe for you! They come together in under 30 minutes with pantry staples and easy to follow steps. Plus, there’s so much room for creativity! Why aren’t my home fries getting crispy?

If your potatoes are steaming instead of frying, that means there’s probably too many of them in the skillet. When overcrowding happens, the potatoes steam instead of fry. Avoid this by working in batches as needed. 

How to Make Home Fries

  • Cook the potatoes. Place the cubed potatoes in a pot and cover with water. Add a tablespoon of salt, and bring to a boil, then cook for 5-7 minutes until just slightly tender but not falling apart. 
  • Let them dry. Drain the potatoes well and spread them onto a clean towel or paper towel-lined baking sheet to steam dry for several minutes. 
  • Fry the potatoes. Heat the oil in a large skillet over medium heat until shimmering. Add the potatoes and spread them out into an even layer, and cook undisturbed for 4-6 minutes until deeply golden brown on the bottom. 
  • Flip and keep cooking. Flip the potatoes and continue cooking, turning occasionally, until browned and crisp on all sides and soft on the inside. 
  • Add the last touches. Add butter, onion, cajun seasoning, seasoned salt, garlic powder, and pepper, and stir gently to coat. 
  • Cook the onions. Cook for 4-5 minutes until the onion is soft and lightly translucent. 
  • Enjoy! Serve with freshly minced parsley for garnish, ketchup, eggs, and bacon if desired.

Storing

Let your left over home fries totally cool to room temperature. Then, transfer them to an airtight container and store in the fridge for up to 3 days. 

Ingredient Notes

  • Russet Potatoes – Cutting your potatoes into ½ inch cubes makes sure they cook evenly. Too large, and the outside may burn before the center is soft. Too small, and they may fall apart! 
  • Salt – You’ll need regular table salt (or kosher/flaky sea salt) and seasoned salt. 
  • Oil – You can use canola or vegetable oil. Either is just fine. 
  • Butter – I like salted butter for a little extra flavor, but unsalted butter still adds flavor. 
  • Yellow Onion – Yellow onions have a natural sweetness that add so much flavor. In a pinch, a white onion will also get the job done. 
  • Cajun Seasoning – Use no-salt cajun seasoning to avoid an overly salty dish. Keep in mind that some brands are spicier than others! 
  • Garlic Powder – Add more or less depending on how pronounced the garlicky flavor will be. 
  • Black Pepper – Freshly cracked black pepper will lend the best flavor.
