Place the cubed potatoes in a pot, cover with water, add the tablespoon of salt, and bring to a boil, then cook for 5-7 minutes until just slightly tender but not falling apart.
Drain the potatoes well and spread them onto a clean towel or paper towel-lined baking sheet to steam dry for several minutes.
Heat the oil in a large skillet over medium heat until shimmering.
Add the potatoes and spread them out into an even layer, and cook undisturbed for 4-6 minutes until deeply golden brown on the bottom.
Flip the potatoes and continue cooking, turning occasionally, until browned and crisp on all sides and soft on the inside.
