Sausage and potatoes is one of my all-time favorite comfort foods that I eat year round. And this easy slow cooker method is my favorite way to prepare it! Everything gets tossed into the crockpot, then I get to come home in the evening to a meal that’s ready to serve. It’s got plenty of sausage and potatoes to hit the spot, all coated with the BEST cheesy, creamy sauce. Consider serving it with some dinner rolls to help soak up every last bite of that sauce, because you don’t want that liquid gold going to waste.

What should I serve with crockpot sausage and potatoes?
Rolls are great! I also love making some beer bread when I have extra time. And since this entree is so hearty, it’s a good idea to plate it next to a lighter veggie side dish like roasted asparagus, air fryer corn on the cob, or bacon green beans.
How to Make Crockpot Sausage and Potatoes
- Make the sauce. In the bottom of your slow cooker, whisk together the soups, milk, cheddar cheese, and seasonings. It’s important to whisk these ingredients before adding in the others, so the sauce is smooth and well-mixed.
- Add the key ingredients. Add the sliced sausage, potatoes, and onions to the slow cooker and stir well to coat with the sauce.
- Cook. Cover and cook on high for 3-4 hours or cook on low for 4-6 hours, until potatoes are fork tender. Don’t overcook, or your potatoes will get mushy!

Storing
Once everything cools to room temperature, you can store your leftovers in an airtight container in the fridge for about 3-4 days.
I don’t recommend freezing crockpot sausage and potatoes. The creamy sauce won’t hold up well.
Ingredient Notes
- Cheddar Cheese Soup and Cream of Chicken Soup – You’ll need both of these to create the best cheesy, creamy sauce. If you want a lighter consistency, you could opt for low-fat versions of these soups.
- Milk – I use whole milk, but any other milk should work just fine.
- Shredded Cheddar Cheese – I highly recommend shredding it off the block if you can! Shredded cheese comes coated with an anti-caking powder that prevents it from clumping, which is great, but it can cause it to seize up and not blend with the other ingredients.
- Seasonings – I keep it simple with salt, pepper, and some garlic powder. You can add anything else you’d like – Cajun seasoning would be perfect here.
- Sausage – Smoky kielbasa is my favorite to use in this recipe! Try to make sure it’s all evenly sliced so it cooks evenly and fits nicely on a fork. For even more flavor, you can also brown it first before adding it to the crockpot.
- Baby Potatoes – When stirring at the end, try not to mash the potatoes. It’ll thicken up the sauce too much and you’ll lose a lot of the desired texture.
- Onion – A yellow or white onion will both work well.

What size crock pot would you need to make this? Or can it be cut down to make less servings? I have a small crock pot for only 2 people. Thanks! I’m looking forward to making this!
I use a 6 quart for this recipe. You may be able to cut it in half as long as your crock pot is 2-3 quart.

Ok I do not cook but this sounds great, is the cooked before going in crock pot? I know sounds crazy but don’t want to mess up.

Trying these tonight, just got it going so should be ready right when I walk in the door from work! I changed a few things due to not having all ingredients on hand …hoping it’s as good as it sounds!
The flavor is good and the potatoes cooked perfectly. We ended up with a pretty watery sauce (we wanted more of a chowder consistency) so we added a few tablespoons of cornstarch and water and let it cook another half hour to thicken. Worked pretty well!
In a pinch you can always use a little instant potatoes to thicken your sauce
