You can never go wrong with a warm sub sandwich for any time of day or night. These cheesy chicken subs are stuffed with flavorful chicken, covered in two types of melted cheese, and baked into a sub roll slathered in butter and garlic. Top with some fresh veggies and your favorite condiments and serve alongside a batch of crispy french fries for the ultimate lunch or dinner. Who needs one of those gourmet sandwich shops when you’ve got a recipe like this? Skip the line and the trendy price tag and enjoy a sub your way right in your own kitchen!

Can I make this with shredded chicken?

You absolutely can. If you’ve made a batch of my super easy Crockpot Shredded Chicken and are looking for a new recipe to incorporate it into, just adjust the seasoning and prep the subs when ready to eat. This recipe is also great for leftover chicken if you’re looking for a new way to use up a rotisserie chicken.This particular kind of sub would also taste amazing with some thinly sliced steak similar to a Philly cheesesteak!

How To Make Cheesy Chicken Subs

  • Preheat. Preheat your oven to 350°F. Grab a large baking sheet (line or spray if you’d like) and set aside.
  • Spread. In a small bowl, mix together the softened butter and garlic. Spread the mixture evenly over both sides of each sub.
  • Bake. Place the prepared sub rolls onto the baking sheet and bake for 10 minutes.
  • Toss. Place the chicken in a large bowl. Drizzle the olive oil over the chicken and sprinkle on the Cajun and chicken seasonings, garlic and onion powder, salt and pepper. Toss to coat.
  • Cook. In a large skillet, cook the chicken over medium high heat until browned. Don’t be afraid to cook the chicken in batches so you don’t overcrowd the pan and ensure everything cooks evenly.
  • Fill. Once the chicken is cooked and the rolls are out of the oven, fill each roll with an even amount of the chicken.
  • Top. Sprinkle the cheddar and mozzarella over each sub.
  • Bake. Bake for an additional 10-15 minutes until the cheese is nice and melted.
  • Serve. Serve with shredded lettuce, sliced pickled, diced or sliced tomatoes, some red onion and a drizzle of mustard if you like. Enjoy!

Storing Cheesy Chicken Subs

While the subs themselves are best enjoyed when fresh out of the oven, the chicken can be made and stored separately in an airtight container in the fridge for up to 3 days. The chicken also makes for a great cold sandwich as well!

Ingredients Notes for Cheesy Chicken Subs

  • Butter – Salted or unsalted, up to you. Just be sure to let the butter soften to room temperature for easier spreading.
  • Garlic – About 3 cloves, finely minced. Feel free to measure with your heart!
  • Sub Rolls – Cut them in half lengthwise. You can leave them connected at the edges to better hold in the chicken and cheese filling. 
  • Chicken – About a pound and a half of chicken breasts. You’ll want to cut them into about 1 inch, bite sized pieces.
  • Olive Oil – Something light to cook the chicken in and get all the seasoning to stick.
  • Seasoning – I use a blend of Cajun seasoning, chicken seasoning (you’ll find this near the steak seasonings), garlic and onion powder, salt, and pepper. 
  • Shredded Cheese – I like to use a combo of cheddar and mozzarella but feel free to play around with the pairings or to use whatever is already in your fridge.
  • Optional Toppings – Shredded lettuce, diced tomatoes, pickles, sliced red onion, mustard, etc.

Ingredients 

Optional toppings:

  • 2 Cups Shredded lettuce
  • 1 Large tomato deseeded and diced
  • 1/2 Cup Sliced pickles
  • 1/2 Red onion thinly sliced

Instructions 

  • Preheat the oven to 375 degrees Fahrenheit.
  • Mix the butter and garlic in a small bowl then spread it evenly over both sides of each of the subs.
  • Place the subs on a large baking pan and bake for 10 minutes.
  • In the meantime, mix the chicken, oil, Cajun seasoning, chicken seasoning, garlic powder, onion powder, salt, and pepper in a medium bowl.
  • Cook in a large skillet over medium heat until browned. (You may need to do this in 2-3 batches to avoid overcrowding the pan and so it gets some nice color on it.)
  • Spoon the chicken evenly in the 6 subs then sprinkle evenly with the cheddar and mozzarella cheeses.
  • Bake for 10-15 minutes or until golden and the cheese is melted.
  • Serve with shredded lettuce, tomato slices, sliced pickles, and red onion if desired.
