Cheesy Chicken Subs are tender, juicy, and smothered in melty cheese, all hugged tight in a soft buttered sub roll. Baked to perfection and served with your favorite sandwich toppings, these are perfect for lunch or dinner!
Mix the butter and garlic in a small bowl then spread it evenly over both sides of each of the subs.
Place the subs on a large baking pan and bake for 10 minutes.
In the meantime, mix the chicken, oil, Cajun seasoning, chicken seasoning, garlic powder, onion powder, salt, and pepper in a medium bowl.
Cook in a large skillet over medium heat until browned. (You may need to do this in 2-3 batches to avoid overcrowding the pan and so it gets some nice color on it.)
Spoon the chicken evenly in the 6 subs then sprinkle evenly with the cheddar and mozzarella cheeses.
Bake for 10-15 minutes or until golden and the cheese is melted.
Serve with shredded lettuce, tomato slices, sliced pickles, and red onion if desired.
