Cheesy Baked Asparagus 

This has pretty quickly become the only way Iโ€™ve been eating asparagus lately. The deliciously seasoned, tender, oven-roasted asparagus served beneath a blanket of melted Havarti cheese is usually better than whatever entree itโ€™s served next to! It feels fancy, but itโ€™s secretly so easy to toss together with simple ingredients. This is the best recipe to whip out when you have dinner guests over and want to show off without breaking a sweat! Oh, and donโ€™t forget to garnish with a fresh pop of dill on top. It compliments the cheese in the BEST way!

What should I serve with cheesy baked asparagus? 

This is the kind of evergreen side dish that you can make year-round and serve with just about any entree! Serve it next to a baked chicken breast or air fryer salmon on a regular weeknight. Itโ€™s also fabulous as part of your holiday spread!ย 

How to Make Cheesy Baked Asparagus 

  • Prepare. Preheat the oven to 400ยฐF.ย 
  • Season the asparagus. Toss the asparagus in a baking pan with the olive oil and seasonings.ย ย 
  • First roast. Roast for 6-8 minutes until just beginning to soften.ย 
  • Add cheese and roast again. Remove the pan from the oven, sprinkle the cheese evenly over the asparagus, and return to the oven for 4-7 minutes until the cheese is melted and the asparagus is tender.ย 
  • Enjoy! Sprinkle with the dill and serve with lemon wedges if desired.ย ย

Storing 

Wait for the asparagus to totally cool off before storing in an airtight container in the fridge for up to 3 days. To reheat, I recommend popping it back in the oven or air fryer! The microwave tends to dry out the asparagus, but it works in a pinch. I donโ€™t recommend freezing this cheesy asparagus. 

Ingredient Notes

  • Asparagus – I like to use asparagus on the thinner side for this recipe. If your asparagus is thicker, thatโ€™s okay, but you may need to increase the cook time a bit.ย 
  • Olive Oil – Avocado oil also works just fine.ย 
  • Seasonings – I like to keep things simple with garlic powder, salt, and black pepper. Use kosher or flaky sea salt and freshly cracked black pepper for the best flavor. Sprinkle in some crushed red pepper flakes if you want a little heat!ย 
  • Harvati Cheese – Feel free to sub this with mozzarella or Gruyere if preferred.ย 
  • Fresh Chopped Dill – Optional, but I LOVE the way it compliments the cheese!ย
