Sausage & Peppers Tortellini is a comforting, filling, and easy dinner recipe! Tender bites of cheese tortellini are all dressed up with andouille sausage, bell peppers and garlic in a skillet with plenty of marinara sauce. I think my favorite part is the mozzarella and parmesan melted all across the top!
Sausage and Peppers Tortellini

I’ve discovered over the years that if you sneak your meat and veggies into a pasta dish with lots of marinara sauce and gooey cheese, you can get your kids to eat whatever you want them to. In this case, there’s three bell peppers and plenty of sausage in every saucy bite of this tortellini recipe! This easy dinner comes together in about half an hour with budget friendly ingredients and simple steps. It’s quickly become a go-to weeknight dinner in our home and I’m sure your family will love it, too!

What kind of sausage should I use?
I love the way andouille sausage compliments all of the other ingredients in this tortellini pasta recipe! Feel free to change things up with really any other sausage that you like best. The grocery store always has so many options like Italian sausage, chicken sausage, spicy sausage and more.
How to Make Sausage and Peppers Tortellini
- Sauté the veggies. Heat oil in a skillet over medium heat. Add in the chopped bell peppers and onions and cook until just softened.
- Cook the tortellini. I usually do this while I’m sautéein the bell peppers. Boil the tortellini for about 3 minutes, then drain and set aside.
- Add sausage and seasonings. Add the sausage, garlic, salt and pepper to the skillet. Cook for about 5 minutes or until the sausage begins to brown.
- Make it saucy. Stir the marinara sauce into the skillet and let it come to a simmer. Then, reduce the heat and let it keep cooking for about 8 more minutes or until the peppers are softened.
- Add the tortellini and cheese. Stir the cooked tortellini into the skillet. Mix in half of the parmesan and mozzarella until melted.
Ingredient Notes
- Bell Peppers – I like to use three different colors – red, yellow, and green. However, you can change this up however you’d like.
- Garlic – To get the most flavor out of your garlic, smash it with the blunt side of a large kitchen knife prior to mincing.
- Tortellini – I like to use fresh cheese tortellini. If you’re using frozen tortellini or shelf-stable tortellini (found in the dry pasta section), follow the package directions to cook it.
- Marinara Sauce – Any brand will work well! Just use your favorite.
- Cheeses – This recipe calls for both mozzarella and parmesan. I recommend freshly shredding both for the very best consistency and flavor.
- Seasonings – I like to keep it simple with just salt and pepper. You can always add more spices like crushed red pepper flakes or Italian seasoning if you’d like!

Sausage & Peppers Tortellini
Ingredients
- 2 Tablespoons Olive Oil
- 1 Red Bell Pepper deseeded and sliced
- 1 Green Bell Pepper deseeded and sliced
- 1 Yellow Bell Pepper deseeded and sliced
- 1 Red Onion sliced
- 1 18 oz Package Cheese Tortellini
- 1 12 Ounce Package Smoked Sausage, cut into ½ inch slices***
- 5 Cloves Garlic finely minced
- 1/2 teaspoon Salt
- 1/2 teaspoon Ground Black Pepper
- 1 23 oz Jar Marinara Sauce
- 1 1/2 Cups Mozzarella Cheese freshly shredded
- 1 Cup Parmesan Cheese freshly grated
Instructions
- Heat the oil in a large skillet over medium heat then add the red, green, and yellow peppers and onion and cook until they start to soften, about 5 minutes.
- In the meantime, boil the tortellini for 3 minutes, drain and set aside for later.
- Add the sausage, garlic, salt, and pepper to the skillet and cook for 5 minutes or until the sausage starts to caramelize.
- Stir in the marinara and let it come to a simmer then turn the heat down and let it cook until the peppers are soft, about 8 minutes.
- Stir in the cooked tortellini then turn the heat off and stir in half of the mozzarella and parmesan until fully melted.
- Sprinkle the remaining cheeses on top then cover with a lid and once the cheese is melted, serve with sliced basil and more grated parmesan if desired.
