What’s better than a buttery, decadent square of vanilla-lime goodness, topped with a sweet and zesty glaze? I mean, what’s better than a pan of Brownies in general? Nothing! These summery treats are what dreams are made of. I’m a certified lime lover (you can catch me sipping margaritas all year round), so it’s safe to assume that if I’m not actively making these lime brownies, I’m day dreaming about them. While they’re made from scratch, they’re SO quick and easy to toss together! And when they’re in the oven, they make the whole kitchen smell like a sweet, sunshine-y bakery by the beach.

How do I Get Lime Brownies Gooey?
Gooey brownie lovers of the world, I hear you! I like to leave mine ever so slightly underbaked. Once they reach the 30 minute mark, I promptly remove them from the oven. I like when the toothpick comes out clean, but I don’t want them to bake a second longer than they need to so I can have that gooey middle! There’s also a good amount of butter in the mixture to make sure they don’t ever taste dry, even if they stay in the oven for an extra minute or two.
How to Make Lime Brownies:
- Prepare. Preheat the oven to 350°F. Line a 9×13-inch baking pan with parchment paper (this makes removal quick and easy)!
- Whisk dry ingredients. Whisk together flour, sugar, and salt.
- Add butter. Mix the butter into the flour mixture until combined and thick.
- Whisk wet ingredients. In a separate bowl, whisk together the eggs, lime juice, lime zest, and vanilla.
- Combine to make the batter. Stir the egg mixture into the flour mixture just until combined. Don’t over-mix, or you risk making the brownies tough.
- Bake. Spread the batter in the pan in an even layer. Bake for 30-35 minutes.
- Let cool and top. Let the brownies cool completely. Sift the powdered sugar into a medium bowl, then whisk in the remaining glaze ingredients until smooth. Spread evenly over the cooled brownies and let it set until it forms a “crust” on the top. Note that this takes about 30 minutes, and it won’t work if your brownies are still warm from the oven.

Storing Lime Brownies:
Let the lime brownies cool to room temperature before storing or freezing for later. In an airtight container at room temperature, they’ll keep for up to 5 days. No need to refrigerate.
Key Ingredients:
- All-Purpose Flour – Spoon and level your flour when measuring it. If you dunk the measuring cup into the bag, you’ll end up really packing it. Packed flour is too much flour.
- Sugar – Plain white granulated sugar balances the tart lime flavor perfecty.
- Salt – Just a pinch! Flaky sea salt or kosher salt is preferred.
- Salted Butter – Melted and cooled to room temperature. You don’t want to accidentally cook the eggs in warm butter.
- Eggs – I like to use room temperature eggs when baking so they mix in more seamlessly with the other ingredients.
- Limes – You’ll need fresh lime juice and zest. Don’t swap this with bottled lime juice if you can help it! Fresh limes really create the best flavor.
- Vanilla – I like to use pure vanilla extract, not imitation.
- Powdered Sugar – If you feel like your glaze is too thin, you can always stir in more powdered sugar (a little at a time) until it reaches your desired consistency.

- 2 1/2 Cups All Purpose Flour
- 2 Cups Granulated Sugar
- 1 teaspoon Salt
- 1 1/2 Cups Salted Butter melted and slightly cooled

- 1/2 Cup Fresh Lime Juice
- 2 Tablespoons Lime Zest
- 2 teaspoons Vanilla Extract
For The Glaze:
- 2 Cups Powdered Sugar
- 4-6 Tablespoons Fresh Lime Juice
- 2 teaspoons Lime Zest
- 1/2 teaspoon Vanilla Extract
Instructions
- Preheat the oven to 350°F and line a 9×13-inch baking pan with parchment paper or lightly grease it.
- Whisk together the flour, sugar, and salt in a large bowl.
- Mix the butter into the flour mixture until fully combined and thick.
- In a separate bowl, whisk together the eggs, lime juice, lime zest, and vanilla.
- Stir the egg mixture into the flour mixture just until combined, being careful not to overmix.
- Spread the batter evenly into the prepared pan.
- Bake for 30-35 minutes, until the edges are set, and a toothpick comes out mostly clean when inserted in the center.
- Let the brownies cool completely in the pan.
- Sift the powdered sugar into a medium bowl, then whisk in the remaining glaze ingredients until smooth. (If the glaze is too thick, you can add a tablespoon of milk or water at a time until it reaches your desired consistency.)
- Spread evenly over the cooled brownies and let it set until it forms a “crust” on the top and the icing is no longer tacky. (This will take around 30 minutes.)
- Zest more lime onto the brownies if desired before slicing and serving.
