Cheesy, creamy, spicy, and loaded with bacon – this dip really does have it all! If you’re searching for the ultimate game day dip, congrats. You’ve found it! This cheesy buffalo corn dip is always a hit and usually disappears pretty quick at parties. Between the spicy buffalo sauce, sweet corn, and salty bacon, there’s a whole lot to love here! The varying textures are pretty addictive, too. The best part? It all comes together with minimal effort in about 20 minutes. I usually throw it in the oven just before guests arrive as a last minute app when I need something low-stress.

What do I serve with it?
There are so many options to choose from! Celery and crackers are my favorite dippers, but you could always grab some tortilla chips if you’d like. Doritos would also be fun! I also like to garnish my dip with some crispy bacon, chopped green onions, and if I have the time, grilled corn.
How to Make Cheesy Buffalo Corn Dip
- Prepare. Preheat the oven to 375°F.Â
- Mix. Beat the cream cheese until smooth, then mix in the mayo, buffalo sauce, ranch seasoning, and garlic powder. Fold in the corn, bacon, 1 cup of cheese, and green chilis.Â
- Assemble. Spread the dip into your pan or casserole dish. Sprinkle it with the remaining cheese.Â
- Bake. Bake for 20-25 minutes. It’s done when the cheese is melted and bubbly.Â

Storing Cheesy Buffalo Corn Dip
Let the dip fully cool to room temperature prior to storing in an airtight container in the fridge. Properly stored, it’ll stay good for up to 4 days. To reheat, microwave it for 30 seconds at a time until warmed all the way through.
I don’t recommend freezing this cheesy dip. The cream cheese won’t freeze/thaw very well.
Ingredient Notes for Cheesy Buffalo Corn Dip
- Cream Cheese – It’ll need to sit on the counter for at least 1 hour to soften to room temperature prior to using. Also, you can use regular or low fat. Just note that low fat cream cheese won’t be quite as creamy.Â
- Mayonnaise – Even the staunchest mayo haters won’t be able to detect it! The flavor is entirely overpowered by the other bold ingredients. It’s just here to help with the consistency.Â
- Buffalo Sauce – Use your favorite brand – mine is Frank’s Red Hot Buffalo sauce.Â
- Ranch Seasoning Mix – Keep in mind that this is the seasoning powder, NOT the dressing. However, a little drizzle of ranch dressing on top might be nice!Â
- Garlic Powder – Feel free to add more if you love garlic.Â
- Corn – I use 2 cans of corn for this easy recipe. Make sure to thoroughly drain each can so you don’t have any extra liquid. You could also use an equal amount of frozen corn.Â
- Bacon – Cooked and crumbled! Turkey bacon also works if preferred. I like to make a little extra to have as a crispy garnish.Â
- Cheddar Cheese – I like to shred it right off the block when I have the time. It makes such a big difference with flavor and texture.Â
- Diced Green Chilis – Or, use an equal amount of chopped poblanos or jalapeño peppers. There’s some room for creativity here!Â

Ingredients
- 8 Ounces Cream cheese softened
- 1/2 Cup Mayonnaise
- 1/4 Cup Buffalo sauce
- 2 Tbsp Powdered ranch seasoning mix
- 1/2 tsp Garlic powder
- 2 15 oz Cans Corn kernels drained
- 6 Slices Bacon cooked and crumbled
- 1 1/2 Cups Shredded cheddar cheese divided
- 1 4 oz Can Diced green chilis
Instructions
- Preheat the oven to 375 degrees Fahrenheit.
- In a large bowl beat the cream cheese until smooth.
- Add the mayonnaise, buffalo sauce, ranch seasoning, and garlic powder and beat again until smooth.
- Fold the corn, bacon, 1 cup of the cheese, and green chilis into the cream cheese.
- Spread the dip into a small 8-inch or 5×7 inch pan or casserole dish then sprinkle the remaining cheese on top.
- Bake for 20-25 minutes or until the cheese is melted and bubbly.
- Serve with crackers and celery and garnish with more crumbled bacon, sliced green onions, and grilled corn kernels if desired.
