Listen, you all know I love a quick and easy recipe. Especially a recipe that can provide plenty of leftovers or feed a crowd in a pinch. Sliders are the best for either instance and thereโs tons of variations. Today I bring you roast beef sliders! Sweet Hawaiian rolls are piled high with tender roast beef. Add on some crispy bacon and bbq sauce for a sweet and salty mix. Then bring on the cheese! I like to use colby jack and mozzarella for the best melty texture. Bake up a big tray and serve! Thereโs barely any prep time to this recipe and like I said, it makes a bunch. Whether you serve them at a game day party, during a summer get together, or as a weeknight dinner along with some grilled veggies, these bacon roast beef sliders are sure to be a family favorite!

What type of roast beef should I use?
When it comes to roast beef, what you want for sandwiches is going to vary slightly more than a cut youโd want for roasting. You actually want a cut thatโs much leaner and has less fat. Opt for something like a top loin. A bottom, eye, or top round cut is also perfect for a recipe like this! Essentially, if you go to the deli counter and let them know youโre looking for sandwich meat they can point you in the right direction. Just be sure to also get it sliced thin!
How To Make Bacon Roast Beef Sliders
- Slice. Without separating the rolls, slice them in half horizontally. Place the bottom half of the rolls in the prepared baking dish.
- Assemble. Top with the Colby Jack, then add the roast beef, shredded mozzarella, and cooked bacon. Spoon the BBQ sauce over top and spread out evenly.
- Bake. Cover the dish with aluminum foil and bake in the preheated oven for 10-15 minutes, or until the cheese is melted.
Storing Bacon Roast Beef Sliders
If you happen to have any leftovers, the sandwiches can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven to keep them crisp (my preferred method) or pop in the microwave until warmed through.
Ingredients Notes for Bacon Roast Beef Sliders
- Rolls – I like to use the soft Hawaiian rolls for sliders because of the slightly sweet taste of the bread. I think the blend of salty and sweet really adds to the overall sandwich.
- Roast Beef – About a pound of thinly sliced, deli roast beef. Any brand will work!
- Cheese – Weโre all about the cheese in this family so I like to use both sliced Colby Jack and some shredded mozzarella. You can use one or the other but I like the flavor of them combined.
- Bacon – About 6 slices, cooked to your preference. You can skip this step if you donโt want to add the bacon or just want to save time on the prep work.
- BBQ Sauce – Choose your favorite flavor and brand! Something a little sweet and smokey is always a great option. You could also add a dash of horseradish to your sandwiches for a kick!
- Butter – Melted. Youโll use this to top the buns.
- Sesame Seeds – Also as a topping and adds an extra bit of crunch to the sandwiches.
Bacon Roast Beef Sliders
Ingredients
- 1 Package Hawaiian Dinner Rolls, 12 Count
- 1 Pound Deli Roast Beef
- 6 Slices Colby Jack Cheese
- 1 Cup Shredded Mozzarella Cheese
- 6 Slices Bacon, Cooked
- 1/2 Cup BBQ Sauce
- 2 Tablespoons Butter, Melted
- Sesame Seeds, For topping
Instructions
- Preheat oven to 375 degrees. Lightly grease the bottom of a 9×13 inch baking dish.
- Without separating the rolls, slice them in half horizontally. Place the bottom half of the rolls in the prepared baking dish. Top with the Colby Jack, roast beef, mozzarella, and bacon. Spoon over the BBQ sauce and spread out evenly.
- Cover dish with foil and bake in preheated oven for 10-15 minutes, until cheese is melted. Remove the foil from the dish. Brush the tops of the rolls with the melted butter, top with sesame seeds as desired. Return to oven uncovered and bake for 5 more minutes.
