Broccoli Cheese Stuffed Chicken is simple to make and baked to tender and juicy perfection! This stuffed chicken breast recipe has the best cheesy filling ever!
Broccoli Cheese Stuffed Chicken Breast:
We are always looking for new and interesting dinners, using chicken breasts that the whole family will enjoy! This hearty comfort food chicken dish takes the classic flavors of Broccoli Cheddar Soup and stuffs it right into a juicy piece of chicken! The cheesy filling is made with tasty ingredients like broccoli, carrot, cream and cheddar cheese. Then, you stuff and seal the chicken with toothpicks and bake with a simple blend of spices, that you can customize as you wish! With our Buffalo Stuffed Chicken Breasts we make everything on the stove top. For this one, we really liked the results best and the chicken came out the most tender when baked. You don’t even need to sear the chicken, it goes right in the oven for truly minimal effort. We like to serve this with a side of Roasted Green Beans or even a good pot of Mashed Potatoes to keep it really comforting! It’s also great with a simple green salad or if you’re a major cheese lover, our Cheesy Corn Casserole!
Broccoli Cheese Stuffed Chicken Recipe Notes:
- I’ve included the photo above to show you how to slice the chicken. You will make a long, vertical slice through the chicken so that you can lay it out flat. Just be careful to not slice all the way through.
- You can use full fat, reduced fat, or fat free cream cheese with this recipe. I don’t recommend using whipped cream cheese because the texture is different.
- You can also use any kind of shredded cheese you wish! Sharp cheddar is our favorite for this recipe. It’s also great with gruyere, or even throw in some parmesan. I like using freshly grated, but in a pinch you can also use bagged pre-shredded cheese here.
- This recipe calls for fresh broccoli florets, but frozen will work fine too. If using frozen, make sure to steam it in the microwave so that it’s thawed completely and cooked through.
- If you don’t like carrots and onions, you can simply leave them out! Nothing else needs changed, although I would add a dash of onion powder for flavor.
- For seasoning the outside of the chicken we use a good amount of smoked paprika (regular is ok too) as well as salt and pepper. You can also add garlic powder, onion powder, seasoned salt, or any dried herbs you like!

Broccoli Cheese Stuffed Chicken
Ingredients
- 3-4 Large Chicken Breasts Patted Dry
- 1 Cup Broccoli Florets
- 1 teaspoon Smoked Paprika
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 4 Ounces Shredded Cheddar Cheese
- 4 Ounces Cream Cheese At Room Temperature
- 1 Large Carrot Peeled and Grated
- 4 Cloves Garlic Minced
- ¼ Cup Minced White Onion
- 3 Tablespoons Olive Oil
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Add the broccoli to a microwave safe bowl and pour ¼ cup of water over the top. Microwave for 1 ½ minutes. Drain the water and set aside.
- Mix the paprika powder, salt and pepper together in a small bowl. Set aside.
- Beat the cream cheese until smooth, then stir in half of the spice mix.
- Mix in garlic and onions, then the cheddar, carrots and finally, gently mix in the broccoli just until combined to prevent it from breaking down too much.
- Rub the olive oil and remaining spice mix on the outside of the breasts. Add more salt, pepper, and any other seasonings you like as desired.
- Carefully cut each chicken breast in half vertically without cutting all the way through.
- Add a dollop of the broccoli & cheddar mix to the breasts and spread it out.
- Close and secure them with 2 or 3 toothpicks.
- Place the chicken in a greased casserole or 9x13 baking dish.
- Bake for 30-35 minutes, or until the internal temperature of the breasts reach 165 degrees Fahrenheit.
- Remove and let them rest for 8-10 minutes before slicing and serving.
- Store leftovers in an airtight container for up to 2 days.
