Instant Pot Beef Stew

Well, you guys, it is way past time for me to post another Instant Pot recipe!  What better way to kick off comfort food season with a quick and easy beef stew?  This tastes so amazing like it’s been simmering away for hours, but it really takes less than an hour and most of the foot work is done by our magical friend, the Instant Pot!

The last time we talked Instant Pot here, we talked about how I was liking it, and my first experiences.  Well, I LOVE it and I’m completely addicted to the thing!  I have a feeling it will be getting regular use year round because it’s almost always the fastest way to get dinner on the table, and it will keep me from having to heat up my oven once that scorching summer heat comes back!

Instant Pot Beef Stew Recipe

So, this beef stew recipe makes exactly enough to serve four people.  Sometimes I can give or take a little on serving size, but this came out just right for four.

The good news is, there was plenty of room in my Instant Pot should I have wanted to double this recipe!  It’s so tasty, and I think everyone likes stew so I’d gladly double this and serve it to company!  Another win with stew is that it’s relatively cheap to make.

TIPS FOR SUCCESS WITH INSTANT POT BEEF STEW:

  • Sear the meat first as directed in the recipe!  Taking the quick stepto sear the meat instead of just tossing everything it produces a much more flavorful stew.
  • Natural release for the best results.  It’s best to always natural release anyway when you have really hot boiling liquids like this.  I also prefer the natural method for the best texture in the meat.
  • Don’t let this cool before adding the cornstarch/water.  You want to add the cornstarch and cold water mixture while the stew is still nice and piping hot for the best thickening.  If you like your stew extra thick, you can double the cornstarch mixture.

Instant Pot Beef Stew

Instructions 

  • Add the olive oil to the instant pot and turn on the saute function. When the oil starts to sizzle add the meat and season with the salt, pepper, and Italian seasoning.
  • Cook the meat until Browned on all sides.
  • Add the beef broth to the instant pot and use a spoon to scrape the brown bits from the bottom of the pan.
  • Add the Worcestershire sauce, garlic, onion, carrots, potatoes, and tomato sauce.
  • Close the lid and steam valve on the instant pot.
  • Cook on high pressure for 35 minutes, then allow the pressure to release naturally for 10 minutes before doing a quick release.
  • Mix together the cornstarch and cold water in a small bowl and stir into the stew until thickened.

    Other than upping the beef to two pounds I didn’t change a thing and the stew was amazing! The recipe is spot on and my new go-to for beef stew!

    Delicious! Only thing I did different, is I used sliced carrots and I always saute’ my onions and garlic first when making any instant pot dish. I find that it brings out the sweetness in the onions otherwise the raw onion and garlic taste can dominate and sometimes be too pungent.

    I made this using no salt added beef broth no salt tomato sauce and substituted a teaspoon of Love salt for the salt in the recipe. I also only use one tablespoon of Worcestershire sauce. Not sure of the total sodium content in when I was done but I’m sure it was much lower and the original version and it tasted fine

    This is my go-to autumn recipe for a celiac household. Be sure your spices, your worcestershire, and beef broth are gluten free and you’ve got a lovely gluten free meal for the family. My only suggestions would be the additions of a splash of red wine, 2 bay leaves, and adding a cup or so of steamed peas at the end of cooking! (Don’t throw the peas in with the potatoes and carrots, unless you like them mushy!) YUM!

      I’ve assembled all 9f my ingredients to make this beef stew. I’m changing a couple of things. I don’t like the flavor of bay leaves so I’m omitting them. I like pieces of tomatoes in my gravy so I’m using a can of fire roasted diced tomatoes rather than tomatoe sauce or paste, I’m adding a little Kitchen Bouquet for color and seasoning. No wine. With these ingredients it has to be delicious.

    This was so easy to make and amazing flavor. I used 2 cups broth and 1/2 cup red wine to deglaze. Will definitely make this again.

    I made the recipe and it was easy. Tasted good. It’s very similar to stew I make in the oven.
    However, when it was done, I used the thickener 3 times as it seemed more like soup than stew!! When I make it again, I will use less broth, and add more potatoes, and use a bay leaf instead of the Italian seasoning.
    I also threw in a handful of frozen peas while it was thickening.

    This was awesome. The best I’ve ever made or tasted. Just because I love peas and green beans, I added 8 oz. of each after I took off the lid. Let them get hot then thickened. It would been just as good without.
