Instant Pot Beef Stew

Well, you guys, it is way past time for me to post another Instant Pot recipe!  What better way to kick off comfort food season with a quick and easy beef stew?  This tastes so amazing like it’s been simmering away for hours, but it really takes less than an hour and most of the foot work is done by our magical friend, the Instant Pot!

The last time we talked Instant Pot here, we talked about how I was liking it, and my first experiences.  Well, I LOVE it and I’m completely addicted to the thing!  I have a feeling it will be getting regular use year round because it’s almost always the fastest way to get dinner on the table, and it will keep me from having to heat up my oven once that scorching summer heat comes back!

Instant Pot Beef Stew Recipe

So, this beef stew recipe makes exactly enough to serve four people.  Sometimes I can give or take a little on serving size, but this came out just right for four.

The good news is, there was plenty of room in my Instant Pot should I have wanted to double this recipe!  It’s so tasty, and I think everyone likes stew so I’d gladly double this and serve it to company!  Another win with stew is that it’s relatively cheap to make.

TIPS FOR SUCCESS WITH INSTANT POT BEEF STEW:

  • Sear the meat first as directed in the recipe!  Taking the quick stepto sear the meat instead of just tossing everything it produces a much more flavorful stew.
  • Natural release for the best results.  It’s best to always natural release anyway when you have really hot boiling liquids like this.  I also prefer the natural method for the best texture in the meat.
  • Don’t let this cool before adding the cornstarch/water.  You want to add the cornstarch and cold water mixture while the stew is still nice and piping hot for the best thickening.  If you like your stew extra thick, you can double the cornstarch mixture.

Instant Pot Beef Stew

Ingredients 

Instructions 

  • Add the olive oil to the instant pot and turn on the saute function. When the oil starts to sizzle add the meat and season with the salt, pepper, and Italian seasoning.
  • Cook the meat until Browned on all sides.
  • Add the beef broth to the instant pot and use a spoon to scrape the brown bits from the bottom of the pan.
  • Add the Worcestershire sauce, garlic, onion, carrots, potatoes, and tomato sauce.
  • Close the lid and steam valve on the instant pot.
  • Cook on high pressure for 35 minutes, then allow the pressure to release naturally for 10 minutes before doing a quick release.
  • Mix together the cornstarch and cold water in a small bowl and stir into the stew until thickened.

    I’ve made this a couple times and it’s everyone’s favorite! We always put it over a little jasmine rice. Tonight I added celery and 2 cups of beef broth (instead of the 2.5) and 1 cup of red wine. It’s cooking now and smells delicious!!!

  2. Do you cut the stew meat before you sear it. If that’s a dumb question, don’t judge. I’m a IP rookie ?

    1. Not judging at all! You don’t need to cut it, unless you have some large pieces. Then I usually cut them down to bite sized 🙂

    Let’s get this out in the open. I’m not a good cook. I don’t burn food and no one has ever gotten sick after eating my cooking but….my cooking is so bland. I’ll follow reliable recipes exactly and BORING. Something in my methods or the touch of my fingers just sucks the taste out of everything I make. Well, except baking. I’m good at that. Tonight I made this beef stew recipe for my son (and he is an excellent cook) and it was great. He had a second helping! I’m impressed. I’m excited. Maybe I’m dreaming…. Wahoo!

    Excellent recipe! Great base to adjust seasoning and create variations. I made it Asian style with pepper corns, star anise, bay leaf, rice wine and soy sauce and it came out delicious, the texture is spot on. I was not sure if the potatoes would overcook but they came out just perfect.

    I doubled the recipe and pressure cooked for 40 minutes, not 35. Turned out great. Next time I might leave out the tomato sauce.

    1. I went with a 6 oz can of tomato paste while searing meat, much better. Also added a can of petite diced tomatoes.

    This is a simple and quick recipe. The flavor is incredible and my family loves it! I followed exactly except after I add the cornstarch slurry, I added extra fresh ground pepper, Himalayan salt and garlic powder to taste. We serve over rice.

    I am always on the lookout for pressure cooker beef stew recipes, it is the perfect food in my opinion. I didn’t get any ingredient info but I did try the 35 minutes on high, then letting it depressurize on it own, and what a difference that makes! It goes to show that you can always learn something by having an open mind! Thank you!

  8. This was excellent and so fast! I didn’t have potatoes so used pearled barley (1/2 cup was plenty). A wee bit spicy for my 8 yr old, but the rest of the family loved it! Definitely doing this again. Thanks for the recipe!

  9. Found this receipt as I am new to instant pot cooking this is the 2nd time I used this particular one. Tried a different one before I found this one. But wife said that this is the best one she has tasted. It was easy and will use it again.
