Instant Pot Beef Stew

Well, you guys, it is way past time for me to post another Instant Pot recipe!  What better way to kick off comfort food season with a quick and easy beef stew?  This tastes so amazing like it’s been simmering away for hours, but it really takes less than an hour and most of the foot work is done by our magical friend, the Instant Pot!

The last time we talked Instant Pot here, we talked about how I was liking it, and my first experiences.  Well, I LOVE it and I’m completely addicted to the thing!  I have a feeling it will be getting regular use year round because it’s almost always the fastest way to get dinner on the table, and it will keep me from having to heat up my oven once that scorching summer heat comes back!

Instant Pot Beef Stew Recipe

So, this beef stew recipe makes exactly enough to serve four people.  Sometimes I can give or take a little on serving size, but this came out just right for four.

The good news is, there was plenty of room in my Instant Pot should I have wanted to double this recipe!  It’s so tasty, and I think everyone likes stew so I’d gladly double this and serve it to company!  Another win with stew is that it’s relatively cheap to make.

TIPS FOR SUCCESS WITH INSTANT POT BEEF STEW:

  • Sear the meat first as directed in the recipe!  Taking the quick stepto sear the meat instead of just tossing everything it produces a much more flavorful stew.
  • Natural release for the best results.  It’s best to always natural release anyway when you have really hot boiling liquids like this.  I also prefer the natural method for the best texture in the meat.
  • Don’t let this cool before adding the cornstarch/water.  You want to add the cornstarch and cold water mixture while the stew is still nice and piping hot for the best thickening.  If you like your stew extra thick, you can double the cornstarch mixture.

Instant Pot Beef Stew

Instructions 

  • Add the olive oil to the instant pot and turn on the saute function. When the oil starts to sizzle add the meat and season with the salt, pepper, and Italian seasoning.
  • Cook the meat until Browned on all sides.
  • Add the beef broth to the instant pot and use a spoon to scrape the brown bits from the bottom of the pan.
  • Add the Worcestershire sauce, garlic, onion, carrots, potatoes, and tomato sauce.
  • Close the lid and steam valve on the instant pot.
  • Cook on high pressure for 35 minutes, then allow the pressure to release naturally for 10 minutes before doing a quick release.
  • Mix together the cornstarch and cold water in a small bowl and stir into the stew until thickened.

    I absolutely loved it! The spices were perfect, the meat was so tender, the veggies were just right (I cut mine larger when I read they might be overcooked), and I can’t say enough good things about it. Delicious!

    I made this last night and it was amazing! I doubled the recipe, added an extra lb. of beef, an extra 8oz. can of tomato sauce, and doubled the cornstarch. Family favorite.. in the recipe book it goes!!

    1. This will be our first time using our Instant Pot. We bought 3lbs of stew meat. Do you cook it longer when you double the recipe?

    This recipe is fabulous. I just got an instant pot for Christmas and was scared to use it. I followed the recipe for the most part, I only had an 8 oz can of tomato sauce so I used that instead of a 10 0z and I added a packet of mccormicks beef stew seasoning. I prefer a thicker gravy for stew so I used 3 tablespoons of cornstarch and water, and I added a can of drained green beans and corn at the very end. This turned out amazing. I was worried the veggies would be mush but it turned out beautifully. I cannot express how wonderful this recipe is and how simple. Thank you so much!

    I had never even thought of making beef stew with tomato sauce and Italian seasoning. The only reason I tried this recipe is because it’s so highly rated. Now I see why! It came out absolutely perfect, even my picky kids loved it. I can’t wait to make this again!

    This was my first instant pot recipe ever with my new IP and it was so easy!! It turned out so well, though a little more tomato-ey than I am used to in beef stew. I added bacon as mentioned in the comments as well as chopped turnip, a bay leaf, and used beef broth with wine already added. Was super good, would make again with simple alterations based on personal preferences. So excited to experiment more with my new pot. Thanks to you and everyone that share their recipes and tips!

    This was really good. I added some pork jowl (basically bacon) as another user suggested. I did make some changes however (which I doubt changed the flavor very much as the base is still the same) was adding some extra beef broth (about two cups) because it didn’t look like there was enough liquid in the pot which either may have had to do with preference of having a less liquidy soup or due to the fact that I may have added a larger quantity of vegetables or beef as I didnt measure anything too specifically. I also added some dried mushrooms, which I may double the amount of next time since I love mushrooms. I also added some cayenne and extra black pepper to give it a bit of a spicy kick. I may skip out on using cornstarch next time so I can have a less thick soup.

    All in all my boyfriend and I loved this soup and I’m definitely making it again because he said it’s favorite soup that I’ve ever made.

    First time using Instant Pot. Next time I will add some celery and less tomato sauce, more spices. I wasn’t sure if the 35 minutes began after the warming which is what I did. I think I may have overcooked it.
