Instant Pot Beef Stew

Well, you guys, it is way past time for me to post another Instant Pot recipe!  What better way to kick off comfort food season with a quick and easy beef stew?  This tastes so amazing like it’s been simmering away for hours, but it really takes less than an hour and most of the foot work is done by our magical friend, the Instant Pot!

The last time we talked Instant Pot here, we talked about how I was liking it, and my first experiences.  Well, I LOVE it and I’m completely addicted to the thing!  I have a feeling it will be getting regular use year round because it’s almost always the fastest way to get dinner on the table, and it will keep me from having to heat up my oven once that scorching summer heat comes back!

Instant Pot Beef Stew Recipe

So, this beef stew recipe makes exactly enough to serve four people.  Sometimes I can give or take a little on serving size, but this came out just right for four.

The good news is, there was plenty of room in my Instant Pot should I have wanted to double this recipe!  It’s so tasty, and I think everyone likes stew so I’d gladly double this and serve it to company!  Another win with stew is that it’s relatively cheap to make.

TIPS FOR SUCCESS WITH INSTANT POT BEEF STEW:

  • Sear the meat first as directed in the recipe!  Taking the quick stepto sear the meat instead of just tossing everything it produces a much more flavorful stew.
  • Natural release for the best results.  It’s best to always natural release anyway when you have really hot boiling liquids like this.  I also prefer the natural method for the best texture in the meat.
  • Don’t let this cool before adding the cornstarch/water.  You want to add the cornstarch and cold water mixture while the stew is still nice and piping hot for the best thickening.  If you like your stew extra thick, you can double the cornstarch mixture.

Instant Pot Beef Stew

Instructions 

  • Add the olive oil to the instant pot and turn on the saute function. When the oil starts to sizzle add the meat and season with the salt, pepper, and Italian seasoning.
  • Cook the meat until Browned on all sides.
  • Add the beef broth to the instant pot and use a spoon to scrape the brown bits from the bottom of the pan.
  • Add the Worcestershire sauce, garlic, onion, carrots, potatoes, and tomato sauce.
  • Close the lid and steam valve on the instant pot.
  • Cook on high pressure for 35 minutes, then allow the pressure to release naturally for 10 minutes before doing a quick release.
  • Mix together the cornstarch and cold water in a small bowl and stir into the stew until thickened.

    Hi there! I made this recipe tonight. The only modification was used 2 cups beef broth and half cup of Shiraz wine to deglaze. I used golden potatoes. They held up really well in the dish! I also added celery and added slightly more potatoes than the recipe calls for.

    This dish is absolutely wonderful. The end result was so delicious!! The meat was so tender yet the dish still has a good bite. I definitely don’t recommend skipping the corn starch solution at the end. Really thickened it up and tied it all together.

    Your beef stew is awesome! I jumped right in. It came out perfectly. I added two bay leaves, the beef was fall apart tender and the carrots and potatoes were so tender. My hubby even ate the carrots and said it was my best beef stew ever. Thank you.

    Excellent recipe! Used the trick someone else mentioned, to put the cut veggies in foil on top of the meat/liquid mixture and it turned out delicious. The only tweak to the ingredients was adding a tablespoon of Gravy Master… just because I bought an enormous bottle on Amazon and need to use it. Will definitely make this again!

    This was my #5 IP meal and it was a huge success. My first meal in my IP was your Spaghetti & Meat Sauce and we loved that so much … had to try another one of your recipes. I always made my Beef Stew in my Crock Pot and thought it was great … but this recipe … your IP Beef Stew … was absolutely fabulous. This is the only way I will do it from now on. Thanks!!!

    Just made this recipe for the first time tonight. The only changes I made were trading 1/2c red wine for 1/2c broth, added some extra veggies and doubled that cornstarch mixture like many suggested. Turned out great!! Would be amazing without the red wine too! I dont like pepper much at all so next time I make it that’ll be my only tweak. A little less, but for any normal human I’d say keep it as listed lol! So happy to have found his recipe! Thanks for posting!

    This was my second time using the instant pot and I don’t think I will ever use anything else!!! So easy and my husband can’t stop raving about how good this beef stew was. I made egg noodles to put it over which is always a hit at our house. I wasn’t sure if I could add them so I cooked them on the stop top. Thank you for helping me on my intant pot journey!!! You nailed it on this one!

    What do I say. Got a new Instant Pot, Wife and I made this recipe, Added 1/2 dup of turnip and 1/2 cup of peas. Doubled the cornstarch and water. Still Perfect. THNAK YOU soooooo much. This is a keeper. Awesome.

    Thanks for this recipe. I tweaked it to make it low histamine. I used my own low histamine broth that I keep on hand in the freezer. I omitted the pepper and Worcestershire sauce. I also replaced the tomato sauce by a nomato sauce that I also keep in the freezer. Although carrots are ok in a low histamine diet, my children refuse to eat them cooked so I replaced them with a large sweet potato cubed. Delicious! The veggies came out mushy, though. I may have cut them too small. The husband loved it that way. It’s definitely going to be one of my favorite low histamine meals.

    This is wonderful. The only change I made was I used 2 cups of broth and 1/2 cup of red wine and cut the potatoes in half, lol. My husband said it was the best beef stew he has ever had. Thanks for sharing 😉
