Parmesan Roasted Cauliflower
I’m always looking for good but simple veggie side dishes like the classic Oven Roasted Vegetables or our Bacon Green Beans and a good Buttered Corn Recipe. Cauliflower is one of those veggies that you can be so sneaky with. Toss it into recipes like loaded cauliflower casserole and you won’t even know it’s in there! However, for those of us who are actually fond of the flavor and texture of cauliflower, it’s pretty great when oven roasted with a handful of simple ingredients. Olive oil, parmesan, and a medley of simple seasonings can dress up a head of cauliflower deliciously! Another big thing I love about this veggie side dish recipe is just how easy it is to make. You just need a few minutes of prep time, then the oven does all the work for you!
Why is My Cauliflower Mushy?
Since cauliflower has a high water content, it can easily overcook. Make sure to not overcrowd the pan when roasting so there’s space for air to flow while cooking. Bake the cauliflower on a piece of parchment or a silicone baking mat for the best results. Make sure you use the amount of oil called for in the recipe and don’t just pour it on, too much oil can make for mushy cauliflower.
How to Make Roasted Cauliflower
Prepare the cauliflower. Cut the head of cauliflower into bite-sized pieces. Toss the pieces with salt, pepper, garlic powder and olive oil. Sprinkle on the parmesan cheese and toss again.
Roast the cauliflower. Spread the cauliflower into an even layer on a baking sheet. Bake at 425°F for 20 minutes, then stir it around before baking for another 10 minutes.

Storing Parmesan Roasted Cauliflower
In an airtight container in the fridge, parmesan roasted cauliflower will stay fresh for about 2-3 days. Let it fully cool to room temp prior to storing to avoid condensation building up in the container. Cauliflower has enough moisture, we don’t want to add to it!
You can reheat roasted cauliflower in the microwave or stovetop, but it might come out mushy. For a crispier result, preheat the oven to 350°F and place the cauliflower on a parchment-lined baking sheet and bake until warm (about 8-10 minutes). I do NOT recommend freezing parmesan roasted cauliflower. It will not freeze or thaw well.
Ingredient Notes for Parmesan Roasted Cauliflower
Cauliflower – You can use a whole cauliflower head for this recipe and then break it down. I did use pre-washed and cut cauliflower for this recipe and it also worked perfectly.
Seasonings – This recipe calls for a simple sprinkle of salt, pepper, and garlic powder. Feel free to add more spices if you’d like! Easily add some heat to this recipe by adding a small amount of cayenne pepper, red pepper flakes, or some cajun seasoning.
Parmesan Cheese – I recommend using freshly grated parmesan cheese for the best consistency and flavor. And for an additional cheesy treat, sprinkle freshly grated parmesan over the top when serving.
Olive Oil – You can swap this with avocado oil if preferred.

Ingredients
- 1 Pound Cauliflower cut into bite-sized pieces
- 1 teaspoon Salt
- 1 teaspoon Garlic Powder
- ½ tsp Pepper
- 2 Tablespoons Olive Oil
- ½ cup Shredded Parmesan Cheese
Instructions
- Preheat oven to 425 degrees.
- Line a baking sheet with a piece of parchment paper or a silicone mat. Set aside.
- Cut cauliflower into bite-sized pieces.
- Place the cauliflower into a large mixing bowl. Add the salt, pepper, olive oil, and garlic powder. Stir to fully combine.
- Add the shredded parmesan cheese. Stir again to fully combine.
- Place the cauliflower onto the prepared baking sheet making sure that the cauliflower is evenly distributed on the baking sheet.
- Roast the cauliflower at 425 for 30 minutes or until the cauliflower is golden brown. After 20 minutes, stir the cauliflower and then bake for another 10 minutes.
- Serve immediately.
