This sausage potato broccoli skillet recipe is a great balance of protein, starch, and veggies for a balanced and satisfying meal. This recipe has a healthy amount of broccoli, but it’s got a good helping of cheese covering it so the kids might actually eat it! If not, you can minimize the amount of broccoli and amp up the potatoes if you think that might be a better option for your household. Feel free to leave the red pepper flakes out too if you’re not a fan of spicy foods. I love it when a recipe has tons of options to adjust for your needs!

How to Make Sausage Potato Broccoli Skillet
- Fry. Cook the sausage in the pan for 6-8 minutes or until they start to caramelize. It should smell and look amazing already!
- Add butter. Remove the sausage from the pan, then melt the butter in the same pan with the remaining tablespoon of oil.
- Add potatoes. Stir in the potatoes and fry for 10-12 minutes, or until they are fork-tender. I recommend stirring every 3-4 minutes to make sure they’re cooked evenly on all sides!
- Mix in the seasonings. Toss in the garlic, Cajun seasoning, paprika, red pepper flakes, and salt. Give the skillet a shake to make sure the potatoes are evenly coated, and cook for 1 minute.
- Add broccoli. Add the broccoli chunks and cook for 5-6 minutes or until they soften. They should turn a nice deep green color when they’re good to go!
- Take off heat. Remove the pan from the heat, sprinkle the cheese on top then cover the pan with a lid. I like to let it sit for 5 minutes or until the cheese is fully melted and gooey.
Can I Add Any Other Veggies?
Sure thing! Feel free to clean out your produce drawer with this one. Chopped green beans, kale, mushrooms, sliced onions, shredded carrots and more can be tossed into this easy skillet recipe.
Storing Leftovers:
You can definitely refrigerate any leftovers you have (which may be none since it’s so good!). Store in an airtight container, and it should keep up to 5 days in the fridge. Pop it in the microwave when you’re ready to reheat and it should warm up pretty quickly!
Recipe Notes:
- Smoked Sausage – I always recommend a beef or pork smoked sausage for this dish to get that hearty taste, but you can use chicken or turkey sausage if you prefer!
- Potatoes – I like to use Yukon gold potatoes for this recipe since they cook pretty quickly and get crispier than other potato varieties. Pro tip – if you get the baby potatoes, it’s a quicker chopping process since they’re already so small!
- Broccoli – Fresh broccoli is key for this one since you want a bit of crispness to the veggie. You can use frozen broccoli but you will want to thaw and drain any liquid first.
- Cheese – We like cheddar cheese in my house since it goes well with the broccoli, but feel free to use mozzarella, colby jack, or any other type of shredded cheese you prefer!

Ingredients
- 3 Tablespoons Olive Oil divided
- 1 Pound Smoked sausage cut into rounds
- 2 Tablespoons Salted Butter
- 1.5 Pounds Baby Potatoes each sliced into quarters
- 3 Cloves Garlic finely minced
- 1 teaspoon Cajun seasoning
- 1 teaspoon Paprika
- 1/2 teaspoon Crushed Red Pepper Flakes

- 3 Cups Fresh Broccoli Florets
- 1 1/2 Cups Shredded Cheddar Cheese
Instructions
- Heat 2 tablespoons of olive oil in a large skillet of medium heat until it shimmers, about 3 minutes.
- Fry the sausage in the pan for 6-8 minutes or until they start to caramelize.
- Remove them from the pan then melt the butter in the same pan with the remaining tablespoon of oil.
- Add the potatoes and fry for 10-12 minutes, or until they are fork-tender, stirring every 3-4 minutes.
- Toss in the garlic, Cajun seasoning, paprika, red pepper flakes, and salt and cook for 1 minute.
- Add the broccoli and cook for 5-6 minutes or until they turn a deeper green color and start to soften. Return the sausage to the pan.
- Remove the pan from the heat, sprinkle the cheese on top then cover the pan with a lid and let it sit for 5 minutes or until the cheese is fully melted.
- Serve with freshly chopped parsley if desired.
