As you all know, I am all about these one pan/pot/skillet suppers right now!  It never ceases to amaze me how simple dinner can be but also just packed with flavor when everything cooks together in one dish.

This delicious meatball and rice skillet comes just in time for National Meatball Day on March 9th.  I promise you there isn’t a tastier way to celebrate the day!

I know that you guys have all spoken, and these one skillet dinners with everyday ingredients and minimal prep and cleanup work are some of your favorites as well.  So, I plan to keep them coming, and keep them creative!

Rice is one of those things that is a major staple food in our house as I find that it is for most people.  But, let’s face it, rice can get just a tad bit boring.  That’s why I really love using flavorful ingredients like Cooked Perfect Meatballs to really liven that rice up!

I love to use Cooked Perfect® Meatballs because they come in a variety of flavors. They are a meatball that I feel good about serving my family because they’re made with real cheese, select meats, lots of savory herbs, and then flame broiled to sear in all of that amazing flavor.

I used the Italian Style for this recipe, but I can tell you it’s also great with the Homestyle or Angus Beef Meatballs!  You can find all of their flavors in your grocery store freezer aisle, and pick out your family’s fave.

One Skillet Italian Meatballs and Rice

This skillet starts out simply with some onions and a couple of diced bell peppers along with garlic until they are nice and soft, and flavorful.

Next, you will simply add in the rest of your ingredients like beef broth, tomato sauce, rice, and of course the meatballs!  Once the mixture comes to a boil you just reduce the heat, cover, and let those meatballs cook up to juicy, tender perfection!

You will really love how flavorful such a simple dinner dish can be!  At the very end, top with a sprinkling of parmesan cheese for a little extra fun!  Shredded or grated parmesan is great in this dish.

One Skillet Italian Meatballs and Rice is an easy one pan casserole packed full of flavor!  Italian meatballs come together with rice, garlic, onions, peppers, in a flavorful tomato sauce for an easy weeknight dinner the whole family will love.

Ingredients 

Instructions 

  • Heat the olive oil in a large skillet over medium high heat.
  • Add the onion, green and red bell pepper, and garlic. Saute for 3-5 minutes until the vegetables are starting to soften.
  • Add the tomato sauce, beef broth, Italian seasoning, salt, pepper, and rice and stir well.
  • Add the meatballs to the skillet and stir to coat.
  • Reduce heat to medium-low, cover the skillet with a lid, and simmer for 18-20 minutes, until rice is tender.
  • Sprinkle with grated parmesan as desired.
