Crockpot Cowboy Casserole is an easy throw together meal loaded with flavor! Savory ground beef, tender potatoes, your favorite salsa, and lots and lots of cheese makes this dish a total crowd pleaser.
Cowboy Casserole
You can never go wrong with a crockpot full of comfort food and this cowboy casserole does not disappoint. It’s perfect to throw together in the morning so you can come home to dinner ready to be served. While the ground beef does have to be cooked prior, the rest all gets dumped together in the slow cooker and melted into a hearty, cheesy dish even picky eaters will want to dig into. You can customize the ingredients by switching up your salsa, swapping the chili beans for black or cannellini beans, and even add in extra veggies like bell peppers, corn, or green beans. You can easily make a larger batch to feed a whole crowd and it’s great for leftover lunches! A hearty meal for a hard working rancher (or just a busy mom and her little cowpokes).

How To Make Crockpot Cowboy Casserole
- Stir. In a small slow cooker (I used a 4 quart one for this and it was perfect), stir together the cooked ground beef, cubed potatoes, chili beans, can of cheese soup, salsa, green onions, and seasonings.
- Cover. Put the lid on the crockpot and cook on low for 7-8 hours. The potatoes should be fork tender.
- Sprinkle. Give everything a stir, then sprinkle the cheese on top. Cover and cook for another 30 minutes or until the cheese is melted and bubbling.
- Serve. Garnish with extra sliced green onions and serve. Enjoy!
Storing Crockpot Cowboy Casserole
You can store leftover casserole in an airtight container in the fridge for 3 days. Just reheat in the microwave for a minute or two until warmed through.
Ingredients Notes for Crockpot Cowboy Casserole
- Ground Beef – Browned and drained. Opt for a leaner ratio for less fat. You could try out ground turkey or chicken as well if red meat isn’t your thing.
- Potatoes – You can use any potatoes you like here. Russet or yukon are great options. Peel them and cut them into cubes.
- Chili Beans – You can get a blend or just use kidney beans. Black beans would be a great substitution here too!
- Cheese Soup – Some recipes use cream of mushroom or cream of chicken but the cheese soup makes for the ultimate base in my opinion.
- Salsa – Use your favorite blend. Spicy, mild, whatever you prefer.
- Onions – Green onions are the best in this dish. Sliced thin and separated from the white bulbs.
- Seasoning – Your favorite taco seasoning, onion and garlic powder, and salt and pepper.
- Shredded Cheese – I prefer a sharp or mild cheddar cheese but monterey Jack or a pepper Jack for a little extra kick would work too.

Crockpot Cowboy Casserole
Ingredients
- 1 Pound Ground Beef cooked and drained
- 1 Pound Peeled Cubed Potatoes
- 1 16-oz Can Chili Beans
- 1 10.5-oz Can Cheese Soup
- 1 Cup Salsa as spicy as you like it
- 3 Green Onions sliced and the whites and greens separated
- 1 Tablespoon Taco Seasoning
- 1 teaspoon Onion Powder
- 1 teaspoon Garlic Powder
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 1/2-2 Cups Cheddar Cheese freshly shredded
Instructions
- Place all ingredients except for the shredded cheese into a slow cooker and stir.
- Cover with the lid and cook on low for 7-8 hours or until the potatoes are fork-tender.
- Stir then sprinkle the cheese on top, cover, and cook on low for 30 more minutes or until the cheese is bubbly and melted.
- Garnish with sliced green onions if desired and serve.
Now this is my definition of what comfort food is, perfect for a chilly day. And could the leftovers be better the next day? Yes!
The Crockpot Cowboy Casserole will be on our “Favorite” list. Very easy to make and DELICIOUS! The cheddar cheese on top is like frosting on a cake. This recipe was good for two so if you are feeding more than two I suggest to at least double the recipe.
Easy to make. Excellent flavor. I used the large square cutter blade on my chopper for the potatoes. Also used canned mixed chili beans. Cheddar cheese on top does add to the flavor. This will be one of our favorites!
