Ok, if you follow along with me on Instagram you already know that I have been dying to share these meatball subs with you guys!  These aren’t your ordinary subs.  Instead of beef, we use ground chicken that is seasoned to perfection and made into tasty little meatballs. They are seared and then simmered in my Easy Homemade Alfredo Sauce.  Then, into buttered buns, they go for a decadent and fun dinner that only takes about 30 minutes to make!

Chicken Meatballs:

The key to this recipe is the chicken meatballs.  Ground chicken doesn’t have a whole lot of flavor on its own so it is important that these are seasoned well and that they come out juicy and tender.

I season my ground chicken with salt, pepper, garlic and onion powder, and Italian seasoning.  We also add parmesan for extra flavor and a drizzle of olive oil to keep them moist.  Panko and egg bind the meatballs together.

When you first sear the meatballs they won’t be cooked through completely, but, they should be nicely browned on all sides.  They will finish cooking in the easy alfredo sauce!  That also gives them tons of extra flavor!

Meatball Subs:

Meatball subs are so easy to make in one skillet!  No need to pull out any special equipment, or wait for the meatballs to bake!  You will form your chicken mixture into balls, then sear them over medium-high heat until browned.  Next, remove them from the pan and make your Alfredo sauce.

You will make the sauce without adding the cheese at this point, and add the meatballs back to the pan.  Allow them to simmer, covered, for about 10 minutes until they’re completely cooked through.

While the meatballs simmer, I lightly butter my hoagies (or you can just use hot dog buns) and broil them for a couple of minutes until they’re golden.  Once the meatballs are ready, you can stir the parmesan cheese into the meatballs and sauce just until the cheese has melted.  Then add the meatballs to your prepared buns, sprinkle with parsley if you wish, and you’re ready to eat!

  1. This recipe is MIND BLOWING. I had bought the ground chicken months ago and was intimated on using ground chicken as it is not something I’m use to cooking with. I regret not making these sooner!! Run to the store… NOW.

The Alfredo is probably one of the best I ever made, it gives serious Olive Garden vibes. My brother is an Alfredo connoisseur and couldn’t get enough!

  3. Hello I’m super excited to experiment this meal , I make meatball sandwiches often and I get reactions that make me blush, they’re pretty tasty I’m assuming! Lol! Our household loves Alfredo sauce meals so I thought why not, I’m game to try any new idea. I love your easy (sounds delicious sauce) recipe. The way I’ve made it in the past is completely different and it is way more complicated, with a lot of time and less quantity. I wanted to ask you what kind of Pablo bread crumbs you recommend ?? Plain or Italian flavored? Thanks for the recipe .

This is for those who are wondering if they should make this…GO OUT RIGHT NOW AND BUY WHAT YOU NEED, SERIOUSLY…. YOU WILL NOT REGRET IT! This was so stink’in good and easy to make! Next time we will double it as our family of 4 did not have a lot of leftovers, which we like. Thank you for this recipe! My tummy does not like tomatoes right now, so this was an awesome find on Pinterest.
