Everyone’s got their go-to beef tips and gravy recipe – I’m happy to share mine with you! It’s all of the classic elements you love with no unnecessary frills or fuss. Tender beef and rich, savory gravy… when it comes to comfort food, this dish really can’t be beat. I’ve got a few not-so-secret ingredients that put this recipe a step above the rest. Red wine, cajun seasoning, Lipton onion soup mix and more come together to create a gravy so flavorful, you’ll have to stop yourself from licking the plate! The combination of ingredients may seem a little strange, but you’re going to need to trust the process here. So, grab your favorite dutch oven and let’s make what my kids agree is the very best beef tips and gravy!

What’s the secret to tender beef tips?

There’s really only one thing you need to do to ensure tender beef tips every time – don’t rush! When you let the beef tips cook in a covered pot for a long time (stovetop or crockpot), you break down the connective tissue. This is what gives it that tender, fall-apart texture. 

How to Make Beef Tips & Gravy

Stovetop Method:

  • Season. Toss the beef tips with flour and all seasonings. 
  • Sear. Heat oil in a dutch oven over medium-high heat. Sear the beef in batches to brown on all sides. Transfer to a plate. 
  • Sauté. Lower the heat to medium. Melt the butter, then cook the onions until soft. Add garlic and cook just until fragrant. 
  • Deglaze. Pour in the red wine and scrape up any brown bits. Use a wooden spoon to do this so you don’t scratch your pot! 
  • Add remaining ingredients. Return the beef to the pot. Stir in the broth, gravy mix, and soup mix. 
  • Cook. Cover and cook for 3 hours. Stir once in a while until the gravy is thick and the beef is tender. 

Slow Cooker Instructions

  • Season. Follow step 1 to toss the beef with the flour and seasonings. 
  • Sear. Heat oil in a skillet. Sear the beef in batches, then transfer to the crockpot. 
  • Sauté. In the same skillet, sauté the onion and garlic in butter until soft, then deglaze with red wine. 
  • Add everything to the crockpot. Pour the onion, garlic, and wine mixture over the beef in the slow cooker. Add the beef broth, brown gravy mix, and Lipton onion soup mix and stir. 
  • Cook. Cover and cook on low for 6-8 hours.

Storing Beef Tips & Gravy

Let your leftovers fully cool to room temperature prior to storing in an airtight container in the fridge. Properly stored, the beef tips and gravy will stay good for up to 4 days. 

Ingredient Notes for Beef Tips & Gravy

  • Beef Stew Meat: This is an inexpensive cut of beef, making it perfect for those of us who are cooking on a budget. 
  • Flour: This helps the beef tips brown beautifully during the searing step. 
  • Seasonings: Salt, black pepper, Cajun seasoning, steak & burger seasoning, garlic powder, and onion powder combine to create the very best flavor palate! Adjust as desired. 
  • Vegetable Oil: Another neutral oil like olive or avocado oil also works well. 
  • Butter: Salted or unsalted, it’s up to you. 
  • Onion: A white or yellow onion will both work just fine. Avoid using red onions. 
  • Garlic: Add more if desired! Just note that with the garlic and garlic powder used in this recipe, it’s already a pretty pronounced flavor. 
  • Red Wine: As a general rule of thumb, only use a wine that you’d actually drink (so you know you like the flavor). You can also substitute it with beef broth if desired. 
  • Beef Broth: I like to use low-sodium broth to better control the saltiness of my dish. 
  • Brown Gravy Mix: This is great not just for the flavor, but because it also thickens the gravy to the best consistency. 
  • Lipton Onion Soup Mix: This takes the flavor to a whole new level of mouthwatering!

Stove Top Instructions:

  • In a large bowl, toss the meat with the lour, salt, pepper, Cajun seasoning, steak & burger seasoning, garlic powder, and onion powder until evenly coated.
  • Heat the oil in a Dutch oven over medium-high heat and sear the beef in 2-3 batches until browned on all sides; transfer to a plate.
  • Reduce the heat to medium, add the butter and melt then cook the onion until soft then stir in the garlic and cook until fragrant, about 30 seconds.
  • Deglaze the pan with red wine, scraping up any browned bits from the bottom.
  • Return the beef to the pot and add the beef broth, gravy mix, and onion soup mix and stir.
  • Cover and simmer for 3 hours, stirring occasionally, until the beef is tender and the gravy is thickened to your liking.
  • Serve with mashed potatoes and freshly minced parsley for garnish if desired.

  • Cover and cook on low for 6 to 8 hours, or until the beef is tender and gravy is thick.
