This Beef and Mushroom Rice Skillet is a hearty meal that’s easy to throw together. Made with browned ground beef, tender mushrooms, sautéed onions, rice, and a classic combination of seasonings, this one pot recipe is the perfect weeknight dinner. It also makes the best leftovers!

Personally, I think every meal should be a one pot meal. Simple prep and easy cleanup are just too good. It’s one of the many reasons why I love this easy skillet recipe. Seasoned beef, earthy mushrooms, and tender rice are a match made in heaven. Filling and comforting you can’t go wrong with a classic dish like this. This skillet meal is versatile too. Throw in some parsley, green bell peppers, or broccoli to give some color and greens to the mix. Add a little heavy cream or a can of cream of mushroom soup for a rich and creamy version. You could even make it a meatless option by omitting the ground beef, adding even more mushrooms, and tossing in some veggies to bulk things up. Easy and delicious, this is definitely making it into the dinner rotation.

What are the best kind of mushrooms to use?
When it comes to mushrooms, it really all comes down to what kind of dish you’re making. With a skillet recipe like this I like to use baby bella mushrooms because they have a more mild flavor that makes them perfect for sauteing. Portobello mushrooms are going to be big and meaty in texture so they’re more suited for grilling or when you want to replace meat in a recipe. Shiitake mushrooms are also common in soups and stir fry for their ability to soak up sauces and flavors they are cooked in.
How To Make Beef and Mushroom Rice Skillet
- Brown. In a large skillet over medium heat brown the ground beef, crumbling as it cooks. Drain off any excess grease and set aside.
- Saute. Melt your butter in the skillet and add the mushrooms and onions. Saute until soft.
- Toast. Toast the rice by adding it to the skillet along with the garlic powder, onion powder, and cajun seasoning. Stir constantly for about 5 minutes.
- Pour. Pour in the beef broth and add back in the cooked ground beef. Turn the heat to high and stir everything together.
- Simmer. As the mixture comes to a nice simmer, turn the heat down to low. Taste and add any additional seasonings you desire.
- Cook. Cover and cook for 20-25 minutes, until the rice is cooked through.
- Serve. Serve with a garnish of fresh thyme and enjoy!

Storing Beef and Mushroom Rice Skillet
You can store leftovers in an airtight container in the fridge for up to 4 days. Heat until warmed through in the microwave or on the stove. If the rice seems a little dry, add more broth and reheat with a damp paper towel over top.
Ingredients Notes for Beef and Mushroom Rice Skillet
- Ground Beef – The leaner the meat, the less fat and grease. If you’re looking for a lighter option, you can also make this dish with ground turkey or ground chicken.
- Butter – I like to use salted butter in this recipe to add more flavor. Of course you can use unsalted and just add more salt as you cook.
- Mushrooms – I love the flavor and texture of baby bella mushrooms. Slice them up for a more bite sized experience.
- Onion – I used white in this recipe but you can use what you have on hand.
- Rice – You want a long grain white rice. Long grain brown or wild rice would also be delicious!
- Seasonings – Garlic powder, onion powder, and cajun seasoning are my favorites. You can always experiment with your own combos.
- Broth – Beef broth adds a rich flavor to the recipe. Vegetable broth could work as a stand in.

Ingredients
- 1 Pound Ground beef
- 2 Tablespoons Salted butter
- 8 Ounces Baby Bella mushrooms sliced
- 1 White onion diced
- 1 Cup Long-grain white rice
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Cajun seasoning
- 3 1/2 Cups Beef broth
Instructions
- Cook and crumble the ground beef in a large skillet over medium heat until brown then drain the excess grease and set the beef aside for later.
- Melt the butter in the skillet then cook the mushrooms and onions until soft, about 8 minutes.
- Stir in the rice, garlic powder, onion powder, and Cajun seasoning, and cook for 5 minutes to toast the rice.
- Pour in the broth and cooked beef then turn the heat up to high and stir.
- Once simmering, reduce the heat to low, taste the broth, and add salt if needed.
- Cover with a well-fitted lid and cook for 20-25 minutes or until the rice is cooked through.
- Serve with fresh thyme sprigs for garnish if desired.
