Huntington Chicken Casserole is a creamy comfort recipe that’s easy to make and will fill you right up! Tender chicken is smothered in a creamy homemade cheese sauce, tossed with noodles, and topped with crispy breadcrumbs.
2-3CupsCooked Chickenshredded (I use a rotisserie chicken)
2CupsEgg Noodles or Small Shell PastaCooked to package directions
1CupVelveeta Cheesecubed
1CupCheddar CheeseShredded
2CupsBread Crumbs
1TablespoonSalted Buttermelted
Instructions
Preheat oven to 350 degrees.
Cook pasta according to package directions, drain and set aside.
Melt the butter in a medium saucepan over low heat, whisk in flour and allow to cook for 2-3 minutes, adding salt and pepper to taste.
Slowly whisk in the chicken broth, whisking constantly, until mixture thickens.
In a large bowl (or dutch oven/same pan you made the broth mixture in if using) combine the broth mixture, shredded chicken, cooked noodles, and cheese until combined.
Pour the pasta mixture into a greased 9x13 inch dish, or cook right in your dutch oven.
Mix together the bread crumbs and melted butter in a small bowl and sprinkle over the chicken mixture.
Bake in preheated oven 20 minutes, until hot and bubbly.

PERSONAL NOTE: This is an "old fashioned" casserole that came to me from my Grandma. It's very simple, but a truly comforting dish. I hope that you all enjoy it as much as I did growing up. This one has been passed down for several generations and I'm so happy to share it with you!
