Instructions
Season the shrimp with the Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and pepper until evenly coated.
Heat oil in a large deep skillet or Dutch oven over medium-high heat.
Cook the shrimp in batches for 1-2 minutes per side until just cooked through, then transfer them to a plate, cover with foil, and set aside.
Reduce the heat to medium, add the remaining tablespoon of olive oil, and cook the garlic for about 30 seconds until fragrant.
Pour in the chicken broth, Cajun seasoning, oregano, basil, onion powder, salt, and pepper, and scrape any stuck bits from the bottom of the pan.
Bring the mixture to a gentle simmer and add the orzo to cook for 6 minutes or until al dente.
Stir in the spinach and heavy cream until the spinach has softened completely, about 2 minutes.
Remove the skillet from the heat and stir in the Parmesan cheese until melted along with the lemon juice.
Return the shrimp to the skillet and serve with freshly minced parsley, grated parmesan cheese, and lemon wedges if desired.
