Ingredients

For the Pasta Salad:

1 Pound Rotini Pasta
2 Cups Shredded Rotisserie Chicken
2 Cups Broccoli Florets
1 Bell Pepper thinly sliced
1 Cup Snow peas trimmed and halved
1 Cup Shredded Carrots
1 Cup Mandarin Orange Slices
1 Cup Halved Cashews
4 Green Onions chopped

For the Dressing:

1/4 Cup Olive Oil
3 Tablespoons Low Sodium Soy Sauce
2 Tablespoons Rice Vinegar
1 Tablespoon Sesame Oil
1 Tablespoon Packed Brown Sugar
2 Cloves Garlic minced
1 teaspoon Sriracha

Instructions

Cook the pasta according to package instructions, then drain and rinse under cold water.
Combine the pasta, chicken, broccoli, bell pepper, snow peas, carrots, oranges, cashews, and green onions.
In a small bowl, whisk together the olive oil, soy sauce, rice vinegar, sesame oil, brown sugar, garlic, and sriracha until well combined.
Pour the dressing over the salad and toss until everything is evenly coated.
Refrigerate for at least 30 minutes to allow the flavors to meld.
Toss again, then serve with sliced green onions and cashews for garnish if desired.
