Bubbly Pumpkin Margarita is a fun a festive fall cocktail that's so simple to make and has tons of warm autumn flavor! This drink can be made as a punch for a crowd too for all of your holiday parties!
Mix together the sugar and cinnamon in a small bowl using a fork.
Dip the rim of the glasses in a small amount of apple cider, orange juice or water. Then, roll in the sugar cinnamon mixture as desired.
Fill glasses with desired amount of ice.
Add the cider, orange juice, pumpkin puree, tequila, and pumpkin pie spice to a large pitcher and stir well or whisk to combine. **SEE NOTE FOR USING BLENDER
Fill each glass 3/4 of the way full with the pumpkin margarita, then top off with champagne.
Serve immediately or store as directed below in the notes.

NOTE ON BLENDING: If you want to make sure this is a super smooth cocktail you can blend all ingredients (except champagne and cinnamon/sugar for rim) for 1 minute in the blender and then pour into a pitcher.NOTE: This recipe makes enough for 6-8 drinks depending on the person. You can easily cut it in half to serve 3-4.NOTE: Once prepared it's best to store in an airtight container in the fridge for up to two days. If storing for later wait to add the champagne/sparkling wine. After storing, the pumpkin will settle and then you will want to blend it or whisk before serving.
