NOTE ON MAKING AHEAD: This can be made ahead and stored in an airtight container in the refrigerator for up to 3 days. You can also make ahead, allow it to cool completely, and store in a freezer safe zip-top bag for up to 3 months. To reheat, thaw the chili first if necessary. Heat in an oven safe skillet over medium heat until warmed. Top with the cheese/chips and broil as directed.
