Instructions
Heat the olive oil in a large skillet over medium high heat.
Add the onion, green and red bell pepper, and garlic. Saute for 3-5 minutes until the vegetables are starting to soften.
Add the tomato sauce, beef broth, Italian seasoning, salt, pepper, and rice and stir well.
Add the meatballs to the skillet and stir to coat.
Reduce heat to medium-low, cover the skillet with a lid, and simmer for 18-20 minutes, until rice is tender.
Sprinkle with grated parmesan as desired.
