Preheat oven to 350 degrees. Line a large baking sheet with parchment paper, and set aside.
In a large bowl using hand mixer, or bowl of stand mixer, cream together the butter, almond butter, and coconut sugar until smooth. Add the egg and mix until well incorporated.
Add the flour, baking soda, and salt to the wet ingredients. Mix for 1-2 minutes, just until incorporated.
Drop dough by rounded tablespoon fulls onto the prepared baking sheet. Bake for 10-12 minutes, until golden brown.
