Bacon Fajita Casserole Breakfast Meal Prep - This bacon fajita breakfast casserole makes for a tasty and easy to make breakfast option for meal prep, a healthier weekend brunch, or a tasty choice for low carb!
Preheat oven to 375 degrees. Grease a 9x9 inch baking dish with non-stick cooking spray, set aside.
Cook the diced bacon in a large skillet over medium-high heat until slightly crisp. Remove to a paper towel lined plate. Wipe excess grease (all but a couple of teaspoons) from skillet.
Cook the bell peppers in the same skillet for 4-5 minutes, until crisp tender.
While the vegetables are cooking whisk the eggs together with the milk and seasonings in a large bowl. Pour egg mixture into prepared pan.
Top the egg mixture with the cooked bacon, peppers, onions, and cheese.
Bake in preheated oven for 30-45 minutes until knife inserted in the center comes out clean.
Serve this immediately. Or, cut into four portions and place in individual containers for meal prep. Store in the refrigerator for up to 5 days.
