BLT Pasta Salad
BLT Pasta Salad is full of crisp bacon, sweet cherry tomatoes, romaine, and cheddar cheese with curly noodles and an easy homemade dressing! Perfect as a side dish or a full meal!

Box Rotini
cooked according to package, rinsed and cooled

Bacon
cooked and crumbled

Cup
Cherry Tomatoes
halved

Package Chopped Romaine Lettuce
approx. 3 cups

Cubed Cheddar Cheese

Tablespoon
Chopped Chives or Green Onion

Mayonnaise

Cup
Milk or Buttermilk

Tablespoon
Vinegar IF using milk
1
Clove
Garlic
finely minced

teaspoons
dried parsley or fresh parsley
chopped, optional
Instructions
In a large mixing bowl, combine the noodles, bacon, cherry tomatoes, romaine lettuce, chives and cheese. Toss well.
In a small bowl combine the milk and vinegar and let sit for one minute.
If using buttermilk, you can skip step 2.
Add the mayonnaise, garlic and parsley to the milk and mix to combine.
Pour desired amount of dressing over the salad and toss to combine.
Serve as a side dish or as a main dish.
Store leftovers in an airtight container in the refrigerator for 2 to 3 days.
Notes
NOTE: You can also add shredded cooked chicken or diced avocado to this recipe right before serving if desired.
