Who I am
Hi, I’m Melissa, the grain and gluten free contributor behind The Salty Marshmallow.
I’m a Colorado wife, mother of 2, and I work from home as a fitness & nutrition
mentor for people all across the United States and Canada.
How I got Started
I have my Bachelors degree in Kinesiology (health & fitness) from Kansas State
University and after working in corporate America for many years as a fitness
coordinator I was finally able to take a step down and become a stay at home mom,
something I had always dreamed of. Working from home as a fitness & nutrition
mentor kind of fell in my lap and it was the perfect opportunity for my family and I!
I started mentoring in the fall of 2014 and I’ve never looked back!
Our Health Story
I’ve had a variety of health issues my entire life that I had just learned to live with
(asthma, anxiety, chronic fatigue syndrome, chronic migraines). A few years ago I
kept reading about individuals, who were changing their chronic conditions through
better nutrition, specifically eliminating grains and gluten from their diets. After
months and months of telling myself I couldn’t do it, I finally decided to just give it a
try. I started slow with eliminating foods, but started feeling better quickly. I became
very motivated by the way I felt. A few months after I made the change, we decided
to make the change with my son (who was in Kindergarten at the time) because of a
variety of health conditions that weren’t getting better. We saw vast improvements
in him within weeks and we have never looked back. I never want him to feel left
out because of his restrictions (especially at school or in social environments) so
that’s why I started experimenting in the kitchen and coming up with healthy &
delicious alternatives to our old favorites. I’m excited and honored to be able to
share my recipes with you!
