Alfredo Sauce:
Alfredo sauce is one of my favorite things to have with a big bowl of pasta! It's a very rich and indulgent treat for dinner. I also love that it only takes about 5-10 minutes to whip up a batch! This recipe will yield about two cups of sauce total. It can easily be doubled if you are feeding a crowd or want extra for later. The bottled Alfredo just doesn't compare to this delicious homemade version! If you love cooking from scratch, make some of this Homemade Pasta to go along with your sauce!
What is Alfredo Sauce?
Traditional Alfredo is a simple white/cream sauce. It is made from butter, heavy cream, and parmesan cheese. While the original style is great, I simply like to add garlic, salt, pepper, and Italian seasoning to make Alfredo sauce taste even better!
How to Make Alfredo Sauce:
- The first step to making Alfredo is to warm your butter and cream in a large saucepan over low heat. You will let it simmer (but not boil) for about 2 minutes.
- Next, you will whisk in your garlic and seasonings. Whisking constantly for about one minute just to let the garlic cook.
- Lastly, you will add your parmesan cheese and stir just until the cheese has melted and your sauce is smooth.
Note that it is best to use freshly grated parmesan cheese right off of the block so that your sauce isn't grainy. I do not recommend using the "shaker" style container grated cheese for this recipe.
The Parmesan will thicken this sauce up. If it isn't quite thick enough, allow the sauce to stand for 2-3 minutes before serving.

Ingredients
- ½ Cup Butter
- 1 ½ Cups Heavy Whipping Cream
- 2 Teaspoons Garlic Minced
- ½ Teaspoon Italian Seasoning
- ½ Teaspoon Salt
- ¼ Teaspoon Pepper
- 2 Cups Freshly Grated Parmesan Cheese

- Add the butter and cream to a large skillet.
- Simmer over low heat for 2 minutes.
- Whisk in the garlic, Italian seasoning, salt, and pepper for one minute.
- Whisk in the parmesan cheese until melted.
- Serve immediately.

I didn't have parmesan cheese (except the bottled dry kind), so I used baby swiss. I added about 3/4 cup of dry white wine and an extra 1/8 cup of butter, onions and garlic and whisked until the wine had reduced. My final addition when the sauce was almost ready was to add about 1/2 cup of cream cheese. It turned out fantastic! Thanks for the base recipe!

I made this tonight and used half and half,,,didn’t have any heavy cream…,added a little extra Parmesan Reggiano to make up for it. My husband and I really enjoyed it with shrimp and linguine. Was nice to have it a bit lighter in taste compared to heavy cream. The temp outside with the high humidity made this enjoyable made with the half n half . Will definitely try with the heavy cream this winter,,but the half n half worked great for me. This is a make again. Thanks

I had the same problem until I left the sauce on for long enough. I just kept stirring with a whiskey you would do with pudding or gravy, for about 20 minutes or so on low. It evened right out.
Correction to my last comment, meant to say "whisking" not whiskey 🤣
Grated parmesan isn't usually the best for recipes as it often has cellulose as an additive to prevent clumping.
If you're having that problem make sure you are using parmigiano reggiano that you grate yourself. If you are using already grated cheese they tend to have anti-caking agents added to them that make emulsification hard to do. If you're still having trouble maybe add less butter.
When I make alfredo I just use heavy cream and reduce by half on a light simmer and add the cheese at the end. Turns out great.
I think it may be from overheating or whisking too much maybe. I use regular grated cheese and it’s always worked fine for me.

This was absolutely delicious! My family said it was like eating at an Italian restaurant! I did not have heavy cream, so as a suggestion from another reviewer, I used half and half, sour cream, and some cream cheese. Decadent and delicious.
Can you use half and half in place of heavy cream?
I would think so for sure. Just won’t be quite as thick or rich.
I used half half and let it simmer for a little longer. Although thinner in texture than the traditional method, it was so delicious.
Even my picky 2.5 year old son devoured his portion (subbed the garlic for lemon this time).

I actually used part milk and part half and half, because that’s what I had. It was the best Alfredo I’ve ever made! So flavorful! I also used grated Parmesan. It may not have been as decadent, but truly delicious!

Absolutely amazing! I doubled the recipe, we’re a family of 6 and I didn’t want to skimp on the sauce! It made enough for leftovers for lunch! Tasted a amazing- by far the best alfredo sauce at home. Super easy too! Thank you!

Hi! Unfortunately alfredo sauce does not freeze well and I don't recommend it. The sauce tends to separate and the flavor and texture isn't the same after freezing heavy cream and cheese.
How do you recommend to reserve the sauce? And how long will it last?
