Instant Pot Beef Stew

Well, you guys, it is way past time for me to post another Instant Pot recipe!  What better way to kick off comfort food season with a quick and easy beef stew?  This tastes so amazing like it’s been simmering away for hours, but it really takes less than an hour and most of the foot work is done by our magical friend, the Instant Pot!

The last time we talked Instant Pot here, we talked about how I was liking it, and my first experiences.  Well, I LOVE it and I’m completely addicted to the thing!  I have a feeling it will be getting regular use year round because it’s almost always the fastest way to get dinner on the table, and it will keep me from having to heat up my oven once that scorching summer heat comes back!

Instant Pot Beef Stew Recipe

So, this beef stew recipe makes exactly enough to serve four people.  Sometimes I can give or take a little on serving size, but this came out just right for four.

The good news is, there was plenty of room in my Instant Pot should I have wanted to double this recipe!  It’s so tasty, and I think everyone likes stew so I’d gladly double this and serve it to company!  Another win with stew is that it’s relatively cheap to make.

TIPS FOR SUCCESS WITH INSTANT POT BEEF STEW:

  • Sear the meat first as directed in the recipe!  Taking the quick stepto sear the meat instead of just tossing everything it produces a much more flavorful stew.
  • Natural release for the best results.  It’s best to always natural release anyway when you have really hot boiling liquids like this.  I also prefer the natural method for the best texture in the meat.
  • Don’t let this cool before adding the cornstarch/water.  You want to add the cornstarch and cold water mixture while the stew is still nice and piping hot for the best thickening.  If you like your stew extra thick, you can double the cornstarch mixture.

Instant Pot Beef Stew

Instructions 

  • Add the olive oil to the instant pot and turn on the saute function. When the oil starts to sizzle add the meat and season with the salt, pepper, and Italian seasoning.
  • Cook the meat until Browned on all sides.
  • Add the beef broth to the instant pot and use a spoon to scrape the brown bits from the bottom of the pan.
  • Add the Worcestershire sauce, garlic, onion, carrots, potatoes, and tomato sauce.
  • Close the lid and steam valve on the instant pot.
  • Cook on high pressure for 35 minutes, then allow the pressure to release naturally for 10 minutes before doing a quick release.
  • Mix together the cornstarch and cold water in a small bowl and stir into the stew until thickened.

    This is such a wonderful recipe, so delicious. I used less carrots and added chopped celery. Next time I prefer less tanginess and will try just half amount of worchestire sauce. The meat came out very tender and on the verge of flaking which is simply divine! The type of beef used is important and don’t use too lean meat otherwise it might end up tough and chewy instead. FYI I used chuck blade roast cut and lucked out. Avoid buying the precut stewing beef at the store because typically too lean.

    Also, can probably get away with just 3min slow release and then quick release (which took 3 more min until depressurized) and should still be fine.

    This was the first beef stew I ever made in my IP and it was incredible!! Only changes I made were seasoning the meat beforehand and browning the meat on my cast iron skillet, adding chopped up celery, using only 8oz of tomato sauce, added 2 bay leaves, and then adding canned green beans at the very end. I also cut back on the black pepper after reading some of the comments. This beef stew tastes like the kind my mom always used to make, it made me nostalgic. 🙂 the meat is so tender and everything is just so delicious and filling. Will definitely make again.

    I made this last night and my family loved it. It was a little spicy, but nobody minded. I might cut back to 1/2 tsp of black pepper next time. There will definitely be a next time. By the way, I calculated the nutrition information and it came out to 357 calories per serving (I admit to using 1.7 lbs. of stew meat, but I was at the gorcer’s mercy). Would you be willing to recheck your information? Thank you for a great recipe!

    I just recently bought an Instant Pot and this was the first time I’ve used it for stew. The flavor was great and the meat was very tender. My only problem was the potatoes came out very soft, almost mushy. Any suggestions?

    1. You could try shaving 5 minutes or so off the cooking time if your vegetables were too soft. Glad you liked it! 🙂

      I typically start the cooking with everything except the carrots and potatoes. When I’ve got about 12 minutes or so left, I do a quick release, add the potatoes and carrots, and start it back up for 10 minutes. I then let it release naturally and enjoy. Obviously, you could tweak the times depending on how soft/firm you want everything.

      (The reasoning behind the times is I count some of the time it takes to re-pressurize as cooking time, because… you know… it’s still hot in there)

    Wow. This stew was amazing. Beef was tender and delicious. Cooked in about 1.5 hours instead of 3+ hours in oven. Delish. Definitely will make again.

    GREAT recipe! My husband and I love this beef stew and eat until we’re uncomfortable! Why do that to ourselves? …because it is that good. I follow the recipe exactly except I omit the italian seasoning…no reason why other than it isnt the flavor that we associate with beef stew. It is very delicious our way and I am sure that it is even more delicious with Italian seasoning. Thank you for sharing this recipe with the world…it is a bit more cozy with this stew in it. 🙂
