Instant Pot Beef Stew

Well, you guys, it is way past time for me to post another Instant Pot recipe!  What better way to kick off comfort food season with a quick and easy beef stew?  This tastes so amazing like it’s been simmering away for hours, but it really takes less than an hour and most of the foot work is done by our magical friend, the Instant Pot!

The last time we talked Instant Pot here, we talked about how I was liking it, and my first experiences.  Well, I LOVE it and I’m completely addicted to the thing!  I have a feeling it will be getting regular use year round because it’s almost always the fastest way to get dinner on the table, and it will keep me from having to heat up my oven once that scorching summer heat comes back!

Instant Pot Beef Stew Recipe

So, this beef stew recipe makes exactly enough to serve four people.  Sometimes I can give or take a little on serving size, but this came out just right for four.

The good news is, there was plenty of room in my Instant Pot should I have wanted to double this recipe!  It’s so tasty, and I think everyone likes stew so I’d gladly double this and serve it to company!  Another win with stew is that it’s relatively cheap to make.

TIPS FOR SUCCESS WITH INSTANT POT BEEF STEW:

  • Sear the meat first as directed in the recipe!  Taking the quick stepto sear the meat instead of just tossing everything it produces a much more flavorful stew.
  • Natural release for the best results.  It’s best to always natural release anyway when you have really hot boiling liquids like this.  I also prefer the natural method for the best texture in the meat.
  • Don’t let this cool before adding the cornstarch/water.  You want to add the cornstarch and cold water mixture while the stew is still nice and piping hot for the best thickening.  If you like your stew extra thick, you can double the cornstarch mixture.

Instant Pot Beef Stew

Ingredients 

Instructions 

  • Add the olive oil to the instant pot and turn on the saute function. When the oil starts to sizzle add the meat and season with the salt, pepper, and Italian seasoning.
  • Cook the meat until Browned on all sides.
  • Add the beef broth to the instant pot and use a spoon to scrape the brown bits from the bottom of the pan.
  • Add the Worcestershire sauce, garlic, onion, carrots, potatoes, and tomato sauce.
  • Close the lid and steam valve on the instant pot.
  • Cook on high pressure for 35 minutes, then allow the pressure to release naturally for 10 minutes before doing a quick release.
  • Mix together the cornstarch and cold water in a small bowl and stir into the stew until thickened.

    I found the instant pot didn’t reach a high enough temperature to seat the meat and had to transfer it to a cast iron skillet to get The browning desired. Everything else was great and came out terrific

    1. Mike, is your instant pot Instant Pot brand? If so, pushing the saute button repeatedly will adjust the temperature between low, medium, and high. Mentioning because I’d been using mine for months before I found out.

  3. I accidentally bought all of these ingredients without realizing it’s for instant pot. Is there a way to use these exact same ingredients, but for regular stove top? How would I adjust the recipe exactly to get the same result?

    1. I just got done making this for dinner. This is a grest recipe! I think you can get a similar result if you follow the receipe using a regular stew pot. You will probably need to cook it for longer to allow the veggies to soften and all the flavors to come together. Maybe two hours?

    The name of this recipe definitely does it justice! It was the BEST EVER! Thank you for posting it. This is the first time I have ever made beef stew without celery or tomatoes (diced). I had to fight the urge but I followed the recipe exactly. I did double the cornstarch to make the broth thicker. I also used whole new baby potatoes and waited until the 35 minutes was up, did a quick release, put the potatoes in (whole and some halved) and pressure cooked again for 3 minutes prior to adding cornstarch. Everything was perfect. So so so good. I doubled the recipe and we are having it again tonight. It was the perfect balance of tomato/beef broth flavor!

    This was very easy to make and tasted great. My wife and I thought it was a little heavy on the Worcester sauce so we will prob cut that in half next time. This was my first IP cook and it went great, thanks!

    This was really good. I had to make a few adjustments as I only had a pound of beef. Only used 2 cups of beef stock and three Medium potatoes and half an onion. Because, well that’s what I had. There was a lot of sauce but that was ok because it was tasty. The meat was very tender. My husband enjoyed it very much

    I’m kind of new to pressure cooking but I thought I try this as it looked really good and had some nice reviews. My wife and I made this tonight for the first time. We doubled the ingredients to make a double batch. Cooked it for the recommended 35 minutes. It turned out perfect and is (bar none) the best stew either of us have ever eaten. Seriously, we can’t stop talking about how good this is. This is the only stew recipe you’ll ever need. Just, Wow!

    I’ve made this a few times now and it is one of my favorites. I spray the Instantpot with olive oil vs. using a tablespoon of oil to cut down on fat. Tonight, I decreased the cook time from 35 to 20 minutes with a 10-minute release because 35 minutes overcooks the meat and the makes veggies too mushy, IMO. Great beef stew!
