Almond Butter Cookies – These are the absolute BEST almond butter cookies, they are completely grain and gluten free cookies that are super soft and chewy!

Hey, guys!  As you may know my good friend Melissa typically does the grain/gluten free posts around here.

But, this time, you get me instead!

Melissa recently surprised us all with the news that she and her husband are expecting a new little bundle of joy this year!

I couldn’t be more excited for them – love all dem cute babies!

If you’ve read any of Melissa’s other posts like these almond butter brownies or these cheesecake bites, you probably know a little of her story.

She eats completely grain free for health reasons – but of course, even with grain free living, there still needs to be treats!

Lucky for us, she comes up with the absolute best gluten free treats out there.  Not that I’m biased or anything.

I love that she shares these recipes with us here and we can appeal to more people, because not everyone eats the same way.

Even though I don’t eat grain free, I’ve found her recipes (completely delish) but also super helpful when I’m in a situation of having to take treats to school for my kids and there is someone with a grain allergy in the class.

Otherwise, I would have no idea where to turn!

I know you want me to shush and talk about the cookies.

These are really simple to make.  The dough doesn’t require chilling at all, which is always a win!

They have a nice, rich, almond butter flavor.

They also have that kind of “toasty” flavor that you get from the coconut sugar, which I happen to love.

Nice, soft, perfectly chewy, cookie heaven.

I only ate 4 when they came out of the oven.  Don’t judge.

Almond Butter Cookies

Prep 10 minutes
Cook 10 minutes
Total 20 minutes
Servings 2 Dozen

Ingredients 

  • 1 Stick Butter, softened
  • 1/2 Cup Almond Butter
  • 1 Cup Coconut Sugar
  • 1 Large Egg
  • 1 1/2 Cups Almond flour
  • 3/4 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt

Instructions 

  • Preheat oven to 350 degrees.  Line a large baking sheet with parchment paper, and set aside.
  • In a large bowl using hand mixer, or bowl of stand mixer, cream together the butter, almond butter, and coconut sugar until smooth.  Add the egg and mix until well incorporated.
  • Add the flour, baking soda, and salt to the wet ingredients.  Mix for 1-2 minutes, just until incorporated.
  • Drop dough by rounded tablespoon fulls onto the prepared baking sheet.  Bake for 10-12 minutes, until golden brown.

  1. Can I use white granulated sugar instead of the coconut sugar? Really would love to make these right away, but I don’t have coconut sugar! Thank you!
