These oven roasted crispy potatoes are super simple to make in the oven – potatoes that are crisp on the outside, soft on the inside, packed with garlic and parmesan flavor! These are the perfect side dish that pair well with anything and everything!
I can’t even handle how good these potatoes are!
Crispy outside, creamy centers – these garlicy/salty carbs of goodness make this girl impossibly happy.
What makes me even more happy? NO PEELING. Yep, easy enough for weeknight dinner. Pretty enough for a special occasion.
So, maybe ten minutes to get these on the sheet pan?
They cook up in the oven in about 35 minutes – you will want to give them a little toss about halfway through for max crispiness.
I mean, what are you going to do with all of this free time you have while your potatoes do their thing in the oven?
Read a book? Workout? Spring cleaning?
Realize you have kids and none of that is ever going to happen?

FYI these little guys go perfectly with my Maple Cherry Glazed Easter Ham – this ham is made up in the crock pot, to keep your life as stinkin’ simple as we can.
Note – I used yukon gold potatoes here, but you can use russet potatoes or red potatoes here as well!
- 4 Cups Yukon Gold Potatoes Diced
- 2 Tablespoons Olive Oil
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Salt
- 1 Teaspoon Pepper
- 1/3 Cup Parmesan Cheese Freshly grated
Preheat oven to 425 degrees. Spray a large baking sheet with non-stick cooking spray and set aside.
Wash the potatoes and cube into 3/4 inch pieces. Place potatoes onto prepared baking sheet.
Drizzle the potatoes with the olive oil. Sprinkle with the garlic powder, salt, and pepper. Use a large spoon (or your hands) to mix potatoes and seasonings until well combined.
Bake the potatoes in preheated oven for 20 minutes.
Remove potatoes from oven and stir/toss with a spoon or tongs.
Sprinkle the potatoes with the grated parmesan. Return to oven and cook for 15 more minutes, until golden brown and crispy.
